I usually put my steaks on the bullseye at 200F until they hit 110F. Then I pull the steaks and turn it up to 750F and sear them for a minute on each side. I will try mustard next time My wife's Aunt use to marinate steaks in Dijon mustard and worchestershire sauce. That is also a winner especially on an average steak. Thanks Steve

It doesn’t sound too good, but it cranks the flavor up a couple of notches. I’ve fixed ours that way the last 4 times and they are a winner for sure. The best tasting steaks I’ve ever had.
