I think because Goku and Vegeta are so different, Vegito should get an evolution of blue rather than Ultra ego or Ultra Instinct. It wouldn't make sense for him to go with either path but, because he still strives for power and breaking the limit maybe a blue SSJ2 or perfected blue evolution would be better.

You should do a what if about is goku had more time to train with king kai before the saiyans arrived, allowing him to go train with the other world fighters sooner
I think a good idea for a combination of UE and UI would be to utilize True UI, a technique that allows the user to feel while still gaining the perks of UI, and then stacking UE over it, with UE having the mindset of a destroyer. A good interpretation of that would be lavender hair. theres also the name "Super Saiyan Lavender" but that seems a bit plain, ill let you decide if you use it. You could also make an excuse for "Ultra Vegito" like all those dragonball trends LOL
you should have whis give Vegito an air bubble using the staff around him so he can collected the Super dragon balls without a spaceship, small detail but it could save time from explanations.
Vegito Blue Evolution looks nice, and he about to mix it with Kaioken, Jiren about to face trouble, also Salad, vegito is a mix of Goku and Vegeta so the fusion balances out their flaws, so Vegito should be able to learn Ultra Instinct much easier than Goku did.

I got an idea make the super dragonballs unable to defuse him, so instead he wishes to create copies of goku and vegeta just as they were before he fused but with all of his memories and training. It could lead to him sparring with gogeta, ultra ego vegeta or ultra instinct goku in the future.
Biggest issue I have with this part is that while Vegeto was searching in space, it was the perfect opportunity to include things from GT, like Baby, Dr. Muu and the Machine Mutants. Or the Big Gete Star, or other things like that. Coulda been a cool interesting piece of side-story. Coulda even introduced 73, or the Heaters, or any of a bunch of different things from any of those.
What if Krillin was a saiyan? (Whaf if Krillin wished to be like goku?) During the time skip leading to Raditz' arrival, krillin starts to think about something. He wonders if he could use the dragon balls to learn the secret behind Goku's power, and to see if he could gain it himself. While he works on collecting them, he brainstorms on the wish he will make, and ultimately decides he wants to wish to "Be like Goku", thinking this will grant him the potential buff Goku has He soon gets all 7 and makes his wish, and gets suprised as he grows a tail. Before he can ask anything else of shenron, he dissapears.
What if 17 & 18 fused in the T.O.P? What if Piccolo fused with more namekians? What if Supreme Kai & Beerus used Potara? What if Kami raised Piccolo? What if the Ginyu Squad Turned Good? What if Trunks & Bulla were twins?
