    Ahh mate, almost perfect, before searing, ensure to dry the steak as much as possible with kitchen towel, this will give a much better sear. Dryer the better. But in all well done.

    Hi Cam, I noticed another comment mentioned to sear witha blow torch, I don't wanna take anything away from the guy yes blow torches work and yes you could use your butaine, you do want as wide a flame as possible though , idea is to ensure you seat as fast as possible also you don't actually cook amymore, by searing you will always have a great ring of where it's cooked more, this needs to be minimized hense big fast flame or roaring preferably cast iron pan. Experi3nce has taught me don't get the searsall a load of rubbish, sous vide Gun perfect. I'm sure you've done you homework, that's just my experiences, maybe someone can help us all, I was thinking sous vide freeze and take camping then all I need is to thaw and sear, is that a plan , health maybe don't know?

    Hi Cam
    Mhhh…. 2 hours bathing my steak = not for me mate!
    I Recon we are belongs to the other group. :
    Salting steaks hours before cooking let it dry lay on chopsticks on a plate and keep it on room temperature all time.
    The steak will be absolutely dry on outside and juicy inside.
    You bet, the meater thermometer is the ducks guts. Best on the market at the moment with 2 temp readings for a good reason.
    Last night had a ribeye no bone on the Weber bbq. 1.5 kg piece !
    Set kern temp to 53 degrees, seared it hot both side nice brownish not black burned and the turned the Weber Q1200 to very low to keep around 120 degrees until the kern temp was on 53 degrees exact. 8 min resting to perfect just medium on outer edges…
    Outside dry, inside juice and perfect cooked.
    That’s the way doing it with a gasgrill with a lit no ruining a 1.5 kg nice ribeye steak.
    Cooking time 20+8min rest.
    You reckon, was just enough for 2 eater by 6:00 arvo….
    Cooking over open fire different technic.
    Hope to see the next vids from you soon since we just back to Germany for the summer here in Europe.
    Cheers mate and safe travels all times 😊

    • @WildTouring
      @WildTouring  Месяц назад +1

      I overshoot the temp to start with to preheat the esky, get it close to 70ish. Let it slowly drop and stabilise at 60. Then bang the steaks in. It will hold temp really stable at that temp for a couple of hours!
