    Chef John I've been meaning to thank you. First of all, I really appreciate all your work and effort you put in to making all of these videos. I would secondly like to thank you in particular for helping me contribute to my family's thanksgiving feast this year. I was in a certain lack of funds as far as complicated dish ingredients and what not. so this year I made for the first time in my life , bread. your pita bread to be exact I made about 30 loaves and one batch of loaves (6) that I added a noticeable amount of ghost pepper powder and habanero flakes an extra portion of salt and to tell them apart from the regular loaves since I used whole wheat flour I added black food coloring to make them very obviously different. I have to say they were a hit with all of my family members. my grandfather who is 76 years old has been having chemotherapy and it has ruined much of his taste buds he celebrated those hideous purple buns and said they were the most flavorful thing he ate all day. Thank you for teaching me something I can use for the rest of my life.

    I remember when I used to watch cooking shows as a child I loved seeing the chefs scrap the seeds from the vanilla bean lol. I have no idea why but it was just so satisfying!

    So... yesterday I quit my job as a Metrologist to become a pastry chef - apprentice. I can't believe it... but I was having my doubts, and then this video was posted. My scientific mind says it is just a coincidence, but the other me is saying 'umm.... pastry cream". You are a big reason why I am not longer a Metrologist. Thank you! :D

    I am SO happy you made this. I made a cake a few months ago that was white cake with whipped cream frosting and fresh strawberries. I wanted to put SOME kind of cream in the middle with the strawberries, but couldn't find a recipe for anything I liked. I eventually settled for a white chocolate ganache/mousse type filling, but it just missed the mark for me. THIS however, will be perfect. Can't wait to try it!

    oh, these are my favorite. beard papa's in nyc makes the best cream puffs.

    May I recommend potato starch instead of corn starch? It will have a glossier shine for the cream end appearance

    for me this is the second recipe i did it on cheif john's way the result is fantastic
    first i did the cronuts it was fantastic then i did the puff pastry cause i love it too much the result is fantastic too the idea of the melt butter is amazing i will do more of his recipies

    Chef John, my fiance is allergic to corn - is there another starch that you could use instead other than flour? Tapioca or potato starch perhaps?
