I have 2 questions: What is the strength of the gelatin sheets that you used? I see silver, gold, platinum, etc when looking for these. What is the mat that you are using on your prep area?
Hi Michael, thanks for your comment. The one I’ve used in this recipe is silver gelatine. Platinum is the best choice for making a clear jelly if you do not use agar-agar powder. It’s a silicon mat called NOVO, and it’s anti-slip and works very well as long as you are not going to work with a very sticky dough.
