    Mandy, I consider myself a good home cook, well-versed in many methods. I have *never* seen the separation of dough into gluten and starch before. I was completely mesmerized, and I really really appreciate that you took the time to show us this process, and explain it so well.
    Your channel is my favorite for Chinese cooking; you completely demystify the process. 😉

      i love her accent, ive never made a recipe but i love listening to her talk, the slight 'uh' sound at the end of her sentences is cute (she did it alot more in her older videos)

    I'm fascinated by how much work, effort and how many ingredients went into this dish! So many of us in the world have got used to "convenience" that we have forgotten that the intricate flavours we enjoy usually require this level of love to taste the best. They can never be truly replicated in a factory. I do wonder, though, how often this dish can be made by hard-working people for breakfast every day!? Thank you, as ever, for your wonderful videos.

      It proves the value of a good cooking video if it makes you watch it even if you have no intension to make it. I'm sure you'll be more likely to order it at a restaurant when you see it on a menu or pick up the ingredients when you see them. Perhaps just try to make the spice blend?

      It doesn't seem too difficult. I don't think I'll be able to get all of the spices, but I think the pepper is really what makes the dish. Too bad its the middle of summer. This looks like it would go great on a bed of rice, or even fresh noodles.

    1k like, this is a must do for me since I love peppery condimented foods, time consuming recipe but this lovely lady has taught me that the reward of doing this things the traditional way is so much rewarding and delicious at the end, thank you very much.

    This is a new technique for me. I’ve made laphing by turning the starch into noodles and then stuffing the noodles with the steamed wheat gluten. It’s delicious but way too much work to make often. This is a great way to enjoy similar flavors and textures, but with a little less effort. This is definitely going to be weekend meals for my family. I’m sure it will be fabulous, as I’ve only had success whenever I use your recipes. I can’t wait until your cookbook is available!

    You made seitan! I love this! When I was in high school, like the 1990's, used to make this a lot. I would fortify it with flavors that imitated chicken.

    I really love your recipes! It's so refreshing to see such authentic Chinese cooking from so many regions. Unsurprisingly, I had never heard of this soup but it's absolutely fascinating and I can almost picture the flavours. I already have a huge spice cupboard but it's going to be groaning under the weight of all the new spices, sauces, and other ingredients your recipes are encouraging me to purchase. It's a great problem to have!

    That is a incredibly complex soup and I am certain it is totally worth the time to construct.
    Thank you for taking the time to make this video.
    As a lover of 'Hot and Sour' soup, I always knew there were layers and layers of mysterious flavor elements and unidentified bits in the dish.
    I now know more and will certainly be closer to identifying those items.
    BTW my 'Mandy Wok' arrived yesterday. Please show me some wonderful things to do to tofu with it.
