Lovely market full of fresh, fresh food! Here in the USA, we don't have that particular vegetable; but we do have collard greens and we cook it in much the same way. No need for the salt fist because we cook the vegetables with smoked meat (pork or turkey) that has salt of its own. I have some greens (yes, we call them 'greens' here) in my refrigerator right now. Its good to see how our ancestors handed down traditional cooking through the centuries.
