She needs to be more precise with her measurement. Each Tablespoon she uses is more like 11/2 Tablespoon. Same for her measuring cups. She doesn’t flatten the tops off. It’s more like heaping T. and heaping Cups. It matters. I think she did that with the Paprika.

i make mac n cheese for thanks giving every year and i do a new recipe each year because i havent found one i LOVED. This year i made her mac n cheese and i was so surprise by how good it was. My family was very impressed with me and there was barely any left overs. I will be making it every year now lol.
Hey Josh I have an electric stove top too and I had the same issue momma mentioned in 9:45 . They take forever to heat up but when they get to the level you set it on it stays that hot! The trick is really set to slight lower than what the recipe calls for (ex. It calls for Medium-High heat actually do medium heat and adjust slowly to the desired heat level. A lot of trial and error but its saved me from burning butter lol
I'm happy to see people using roux again. I personally feel that the sauce you end up with when you make a roux is much creamier and more stable than if you don't. It reheats well, and doesn't get all nasty and greasy. This recipe looks really good, very rich. I call this "side dish mac & cheese" because it's so heavy that I only want a little bit.

I think you should not keep removing it from the heat when you’re making your roux and pour your liquids in slowly but continuously. Just my opinion… you’re doing great!
I'm in NC and I always season mine but only use the smoked paprika once in a while.. .and I'm one person and I always spend 2 hrs on mine to get it right.. I like regular paprika and Dijon mustard plus powdered mustard to really add the zing ! Always shred your cheeses before you start the noodle cooking...have it all laid out and ready to mix.
A couple tips for Momma: rinse the pasta with cold water to keep it from continuing to cook and get mushy if it’s gonna sit for a bit. Also, you know your roux is done when it develops a nutty scent.
When making "hot" dishes you typically shouldn't rinse pasta with cold water and you can prevent the pasta from sticking together after draining by adding a little drizzle of olive oil.

Hi, y'all. Roux is, in itself, just flour and oil OR butter. Traditionally, it's actually butter. Growing up, Mamaw always used self-rising. It doesn't matter MUCH, but I've had better texture with self-rising.
Put the cheese in the freezer for an hour before shredding. It'll make it go much faster. Great job, Momma! I've made this, and the first time, it was a labor of love for sure!

I make mine 1/2 tsp. Sea salt. 1lb elbow macaroni, 1 cup heavy cream, 2 cups cheddar cheese 3/4 cup parmesan, black pepper to taste heat cream until begins to boil stir in cheese and seasoning cook 5-7 min till cheese melted add pasta and serve lol and I think it's phenomenal it's way easier to make
Here’s a tip for cheese: I use a food processor, and grate all my big blocks of different cheese, ahead. I bag it and freeze it, and it’s ready when I need it, without waiting. Also, can I help with the dishes?
Grate it in a food processor it's so easy, and block cheese always tastes better. I'm going to try this recipe. I always make a roux and add mustard because that's how my mum did it. You can also put that cheese sauce over steamed cauliflower and then bake it for half an hour. It's delicious. Keep whisking the lumps will come out and if you heat the milk and cream first it helps with the lumps. I'm a chef and have made alot of mac n cheese at home and at work. Mac n cheese is everyone's favourite! The roux is the butter and flour after you add the milks it's the sauce.
Block cheese,melts better.The bag cheese has a waxy feel to it. Doesn’t melt the same way. Also,don’t boil the noodles all the way. They will finish cooking on their own ,in the oven! ❤❤❤❤ your videos!
Pre shredded is coated in an anti clumping agent to prevent it from becoming one huge blob in the bag. It's a pain to shred by hand, but it does make a difference 😊
Mac and cheese from scratch is 100% better than boxed. Just omit the paprika, looked like more noodles could be added to the recipe from how much sauce was made. Nothing like creamy cheese...YUMMY!!

Hey Josh I have an electric stove top too and I had the same issue momma mentioned in 9:45 . They take forever to heat up but when they get to the level you set it on it stays that hot! The trick is really set to slight lower than what the recipe calls for (ex. It calls for Medium-High heat actually do medium heat and adjust slowly to the desired heat level. A lot of trial and error but its saved me from burning butter lol
I'm happy to see people using roux again. I personally feel that the sauce you end up with when you make a roux is much creamier and more stable than if you don't. It reheats well, and doesn't get all nasty and greasy. This recipe looks really good, very rich. I call this "side dish mac & cheese" because it's so heavy that I only want a little bit.

@@Mrsg123Yes a lot of folks don't make a roux anymore! Some add eggs, some don't! The roux does the same as eggs! Holds it altogether! I make both ways, depending on how I feel! My grandma always made a roux!❤😊
Lol! I used about half the amount of cheese the recipe called for. It was an INSANE amount! Mine turned out so cheesy and delicious.

Yep no mustard is going in my Mac n cheese for dang sure. The garlic powder sounds weird too, I would try it with the paprika but I’m not doing all that work to take a chance that mustard and garlic don’t taste right.

I think you should not keep removing it from the heat when you’re making your roux and pour your liquids in slowly but continuously. Just my opinion… you’re doing great!
I'm in NC and I always season mine but only use the smoked paprika once in a while.. .and I'm one person and I always spend 2 hrs on mine to get it right.. I like regular paprika and Dijon mustard plus powdered mustard to really add the zing ! Always shred your cheeses before you start the noodle cooking...have it all laid out and ready to mix.
A couple tips for Momma: rinse the pasta with cold water to keep it from continuing to cook and get mushy if it’s gonna sit for a bit. Also, you know your roux is done when it develops a nutty scent.
Never rinse pasta. If it needs quick cooling, get a sheet pan and spread it out. I learned a lot work as a prep in a restaurant.

No, you don’t need to wash the pasta. My mother doesn’t, never did, and probably never will, and her pasta turns out just fine.
When making "hot" dishes you typically shouldn't rinse pasta with cold water and you can prevent the pasta from sticking together after draining by adding a little drizzle of olive oil.

Hi, y'all. Roux is, in itself, just flour and oil OR butter. Traditionally, it's actually butter. Growing up, Mamaw always used self-rising. It doesn't matter MUCH, but I've had better texture with self-rising.

I make mine 1/2 tsp. Sea salt. 1lb elbow macaroni, 1 cup heavy cream, 2 cups cheddar cheese 3/4 cup parmesan, black pepper to taste heat cream until begins to boil stir in cheese and seasoning cook 5-7 min till cheese melted add pasta and serve lol and I think it's phenomenal it's way easier to make

Here’s a tip for cheese: I use a food processor, and grate all my big blocks of different cheese, ahead. I bag it and freeze it, and it’s ready when I need it, without waiting. Also, can I help with the dishes?

Grate it in a food processor it's so easy, and block cheese always tastes better. I'm going to try this recipe. I always make a roux and add mustard because that's how my mum did it. You can also put that cheese sauce over steamed cauliflower and then bake it for half an hour. It's delicious. Keep whisking the lumps will come out and if you heat the milk and cream first it helps with the lumps. I'm a chef and have made alot of mac n cheese at home and at work. Mac n cheese is everyone's favourite! The roux is the butter and flour after you add the milks it's the sauce.

Block cheese,melts better.The bag cheese has a waxy feel to it. Doesn’t melt the same way. Also,don’t boil the noodles all the way. They will finish cooking on their own ,in the oven! ❤❤❤❤ your videos!
Pre shredded is coated in an anti clumping agent to prevent it from becoming one huge blob in the bag. It's a pain to shred by hand, but it does make a difference 😊

Mac and cheese from scratch is 100% better than boxed. Just omit the paprika, looked like more noodles could be added to the recipe from how much sauce was made. Nothing like creamy cheese...YUMMY!!

Hey Josh and Momma, just a tip for the cheese. Buy all the cheese in bulk and put them in a freezer zip lock and throw it in the freezer and use as needed. Enjoy 😊

It has to be shredded to freeze but I do it all the time in sizes for my regular recipes and use my food saver.. it works perfect ❤
