- The hindquarters, or hams, contain many of the choicest cuts of meat on a deer, so you want to process it with as much care and attention to detail as possible. In the rear quarter you’ll find the sirloins and rounds, both of which are great for cooking whole or slicing into steaks. Deboning these back legs is relatively simple and only requires a few well-placed cuts. In this video, MeatEater's Janis Putelis shows the right way to debone a deer ham.

I wasn't 100% sure whether the outside or the inside of the hindquarter was facing up.
you leave the glands in your meat? Does it affect flavor? i have always removed them
Looks like the gland portion was already cut off
Thats how I quarter my deer out. The whole leg bone never leaves the carcass
I also do that as well too also the same as you do that.

I don't mind videos like this that are a simultaneous education and sales pitch. That's fine; I appreciate the knowledge and the sales pitch doesn't annoy me, especially when it's like this and fairly transparent. However, that being said, I really wish you guys had gone with a company other than Benchmade due to their anti freedom stances and corporate donations. I can't buy from them in good conscience.

@@tracymurray9798 They helped Oregon Police destroy guns that were used in crimes and required by law to be destroyed and snowflakes got all upset by it. And they make political donations to Democrats which also triggers said snowflakes.
these videos although informative are just a sales pitch for an overpriced Benchmade knife, which i would consider buying if it was from different company and made in the U.S.A
