Man I just finished 1 month course from IHM Chandigarh and was making all kind of breads and rolls!! This video is making me so happy. Feels like I am back in the class!! The reason he was beating the dough was to develop the "gluten" in the dough!! You can also do the "window pane" test to see if gluten is formed. Gluten is the key for dough to have good structure once it is "proving" and then baking!! Great video as usual!!!
