Before people say I "ruined" the knife by not cutting in the bevel straight across or changing the bullnose tip profile...I did go back off camera and took 5mins to even the grind out. 😉 Hope the video was helpful...Aloha!
This knife is know as a kamagata usuba. It varies from the deba by being much lighter and more used for vegetables like a Nakiri. It also comes in a shape more like that of a Nakiri. Single beveled on one side and sometimes having a hollow grind on the back side. I love seeing old Japanese knives brought back to life!
Thank you I appreciate very much you sharing the correct names etc. I seem to have a mental block when it comes to learning many of the proper names. I knew if wasnt a deba by the thickness, actually I can see if being a very functional shape and style.
I was very happy to share this with everyone. I was bummed I didnt record a "flawless victory" but its great as a tool in the kitchen which is all this is for.
Appreciate that, it was for a commercial location so the response was much more muted then if it was a customers with the attached love n history. Im sure it turned a few heads when it was brought back~! Thx :)
I just ordered the whole set of scotch brite belts. How long do they typically last if just used for surface work? One of my issues with single bevels on the grinder is keeping the shinogi line even across the whole knife.
Man, you have been making good content lately, but this video was off the charts I know it was probably a pain to make sure every step of the process was caught on camera And all of the unnecessary things were removed But these longer format videos helps my brain grasp the process Keep up the great work Ps thanks in part to your channel im making the move and I am going to start my own business Have a great day aloha!😉
Great stylebender sharpening Cliff, cool to see you on stones as well! I think you should make a 3D printed angle guide with all the mods done. I'd buy a few.
I'm commenting again because I also really like the long format videos. I'm not bothered if everything's not perfect, discussion, improvement & acknowledging what could be improved are way more interesting to me than seeing another flawless performance. I thought your ability to match that secondary bevel was truly impressive. Well done Cliff 💪
@ cool. No hurry. I’m intrigued with that first machine. I need a narrow belt sander for my repairs but even the 1x30 machines are very expensive down here. 2x72 cost thousands!
I had an F Dick butchers knife last week, 3/16 ×3/16! Defect in the middl3 of the blade. My approach was somewhat different. I traced out the new blade used a 1mm cuttoff wheel, to racut the blade . Being careful not to overheat the steel.the final result was great and razors sharp. I do have limited space, and so I work within the limits of both space and equipment.. But issues like these are an interesting challenge. I always pick up something new with your videos that helps me to improve my workmanship.
Restoration regrind work easily starts in the ballpark of about $50. It's some of the most challenging work you can do basically reshaping a knife like a maker would.

@ you did an amazing job keeping the style and saving the blade. Anyone would love to get that back!
There's something so satisfying about resurrection a badly damaged knife! I expect the owner was shocked and amazed, that's a great save.

What did the customer think? That was absolutely STUNNING!

It’s like a new knife. How do you establish a fee for something like this?
