  • Yogurt is a wonderful meat tenderizer and adds a pleasant creamy tanginess. The robust flavors from the za’atar and sumac add loads of zest and warmth to the turkey. Sumac is naturally tangy and pairs well with citrus. Both Za’atar and Sumac can be found in Middle Eastern/ Mediterranean markets.

    I just discovered Za'atar a couple months ago and I have to say that it is one of my very favorite spices. So sad I have missed cooking with it the last 30 year! And locally for me, my regular grocery store actually had it. So I already know this is how I am going to make my turkey this year. Thank you for a great recipe.

    Delicious! This marinade makes for the most tender turkey ever and creates plenty of gravy for a family. Recipe is definitely a keeper! TY! Happy Thanksgiving :)

    That looks delicious. I am going to be trying this on a chicken like you suggested. I love Middle Eastern and especially Greek food so I am sure I will love this.     Very GOOD! And it's the second time that I saw you cook in the oven and put something under the aluminum foil in order to prevent seepage from the aluminum, which in my opinion is GREAT that you do. LEGIT. If you could do the turkey carving that would be great. And yeah, that was some serious good looking gravy just coming out the oven. LEGIT.

    That Lebanon-type seasoning seems like it only enhances the taste of this turkey.
    I'll have to try & find it! Seems like it would enhance your rolls or biscuits.

    I would have never thought to use yogurt as a marinade. I rub everything with butter and cavender's greek seasoning. I usually stuff my turkey with apples and onions.
