- This bread was made with 60% white bread flour and 40% wholemeal flour, 80% hydration.
Here’s my recipe if you’d like to try it
Makes 2 loaves
160g wholegrain levain
480g white bread flour
320g wholegrain flour
630g water
16g salt
10g water
1. Autolyse flour and water for 2hrs
2. Add levain, rest 30min
3. Add salt and 10g water, rest 30min
4. Stretch & Fold, rest 30min
5. 4x Coil folds, rest 30min in between
6. Rest to finish bulk (reach about 80% increase)
7. Pre-shape, bench rest 30min
8. Shape and place in the fridge overnight
9. Next morning - score and bake (25min at 250C with the lid on, then for 15min at 230C with the lid off)*
For this particular scoring I have added an additional expansion score 7min into baking - remove the dough from the oven, add the score and place it back into the oven to finish the 25min of baking with the lid on. Then remove the lid and continue baking for the remaining 15min.

Очень, очень красиво, я восхищена!!! Это высший пилотаж, на такое можно смотреть- повторить невозможно!!! Уважаемый хлебный мастер, можно вас попросить рецепт хлеба и рекомендации к нему размещать и в комментариях. Тогда можно легко переводить текст на другие языки. И еще вопрос: как вы боритесь с кислотой в закваске. У меня это плохо получается. Я не люблю кислый вкус хлеба:)
