    Experience the harvest from picking the grapes through to processing in the winery.

    The vineyards of Saint Aubin are adjacent to the the highly sought-after appellations of Chassagne-Montrachet and Puligny-Montrachet. A main feature of all three appellations is the limestone rich marl soils. The main difference is that the Chardonnay wines from Saint Aubin really punch above their weight.
    .
    Proprietor Lucien Rocault uses a minimal intervention approach in the vineyard and winery to craft his portfolio of Côte de Beaune wines.

    Awesome to see some behind the scenes from the harvest. I’d love to make it out to Burgundy one of these days, but at least in the interim I’ve got a Chardonnay to look out for. Love your work - in front of the camera and behind it.

    That was wonderful to watch! In my mind one of the things that make a place like Burgundy or Bordeaux really great is that the terroir can produce musts that are exactly right to make wine without adding a thing.

    Cool retrospective video about your Harvest season mat :-) Great to have it documented. Love the scene with the little kid helping out with an enormous crate!
    Two questions for you:
    - It looks like there's a lot of missing vines in the opening vineyard scene you show there with the drone view. Do you know why that is? It seems to me with the price of these grapes it'd be worth it filling the gaps planting new baby vines within the rows!?
    - Everything looks very dry and yellow in and around the vineyards for Burgundy at harvest! It was a very dry season wasn't it? Guess we're expecting great wines from there in 2018?

      Well spotted mate - yes it was a very dry 2018 season in Burgundy. Lucien has vineyards from Beaune, Pommard, Bourgogne (near Volnay), St Aubin and Hautes Côtes de Beaune as well as broad acre cropping on the plateau. He has a small dedicated team and I guess it would be difficult to replant every dead vine every year.

    This is awesome. Everyone’s always curious about France (including myself) so this is a really cool inside look to harvest in this particular area. I think it’s incredible what you guys are doing and I can’t wait to see more videos of you in your homeland! Well done, cheers!

    Love the video Mat!Looking at the winery, was wondering what you did with your press wine ?. Did you after settling also reuse or filter the solids...after decanting? As for yeast...guess that is a secret?

      Excellent questions there Philip. The free run and pressings were pressed out together. The racked juice had high solids and the heavy bourbes (aka lees) went to distillation. Wild yeasts were utilised for primary fermentation - the high solids make the wild ferment more spontaneous.

      @@TigesTheWinemaker Glad to hear you sent it for distillation the heavy lees. Am a bit surprised you kept the press wine in. What was the thinking behind that? [Also can't quite figure out how they found an Australian winemaker like yourself that would work with high solids and wild yeast.... way...I only thought the French did that sort of thing?...you must be the new generation of Ozzie winemakers [post Brian Groser [i think that is his name]

      That's a great point@@philipquick7423. When you basket press white grapes, the pressings fraction seems cleaner than bag press pressings. Also, the oxidative handling removes phenolics.

      Also, it's fair to say that Aussie wine has an image problem, where there is a perception of industrial winemaking for all wines. This couldn't be further from the truth - Aussie winemakers are using these same techniques with small parcels of high end fruit. Also, my role in Burgundy was to help out in the cellar and Lucien was the winemaker 👍 @@philipquick7423
