- Homemade Chipotle Chicken Bowls 🍗🍚

I went to Chipotle and was surprised that a bowl with double chicken and guacamole was almost $18. I went to Aldi right afterwards to get the same ingredients in order to make the bowls at home. The total for the ingredients was $15 (not including the oil and spices I already have at home).
Eating lunch out is perfectly fine on occasion! But, I want to show you all that making it yourself can be more affordable, time-saving, and perhaps even enjoyable. Save the money for intentional dinner dates, occasions, and quality time! Cheers!
Ingredients:
-2 lbs of chicken thighs, boneless and skinless
-3 cups of uncooked brown rice
-2 ripe avocados
-1 can of black beans
-1 can of yellow corn
-6 limes
-2 tsp garlic powder
-2 tsp onion powder
-2 tsp ground cumin
-2 tsp dried oregano
-2 tsp smoked paprika
-2 tsp chili powder
-cilantro or parsley bunch, finely chopped
-salt and pepper
-avocado or olive oil for cooking
Instructions:
-add chicken to a bowl and season with above spices; allow to marinate in bowl for 20 minutes up to overnight
-cook brown rice according to package instructions
-add avocado to a bowl and smash; season with salt, lime juice, and cilantro
-add corn and beans to bowls and season with salt, lime juice, and cilantro
-sear chicken in batches until internal temp is 165F/74C
-allow chicken to rest for 10 minutes before dicing
-add cooked brown rice into a bowl and drizzle with oil; season with salt, lime juice, and cilantro
-prepare meal containers and build the chipotle bowls
-store in the fridge for up to 5 days or in the freezer for up to 6 months

-1 lb chicken thighs, boneless and skinless
-2 tbs avocado or olive oil
-1 tbs onion powder
-1 tbs garlic powder
-2 tsp smoked paprika
-2 tsp ground cumin
-2 tsp dried oregano
-1 tsp salt
-1 tsp black pepper
Chicken Ingredients (Marinated Version):
-1 lb chicken thighs, boneless and skinless
-two 7-oz. cans chipotle peppers in adobo sauce
-2 tbs neutral oil
-2 tsp onion powder
-2 tsp garlic powder
-2 tsp ground cumin
-2 tsp dried oregano
-2 tsp smoked paprika
-1 tsp salt
-1 tsp black pepper

Having worked at Chipotle, you can add canned chipotle peppers and honey to the chicken marinade and that is also what is in the vinegrette with red wine vinegar, salt, & fresh oregano. Also, the corn salsa uses cilantro, fresh red onion, jalapeneo, and lemon/lime juice. Rice and beans should also have cilantro, lemon/lime, and salt. Lastly, guac has cilantro, onion, salt, lemon/lime, jalapeneo, and I like to add fresh garlic outside their recipe. Didnt plan on going through all the things but there you go haha.

Add it always tastes better
TIP: If you plan on making in bulk and freezing the meal bowls, freeze the guac separately in individual portions (or just make it fresh each time - since it doesn't take long to prepare). That way, the rest of the food can be (defrosted from the night before) heated all together. Then the cold (or room temp) guac could be added on top.

I agree. I saw four servings. When prepping stuff like this I usually do 8-12 servings and freeze. Depending on the complexity of the overall recipe, scaling up will have diminishing returns, but making eight of these is definitely better use of time than four.

If everyone really started meal prepping, it’s hard to keep up with at first, but trust me you save a lot if you have kids it’s cool to teach your kids early

That’s exactly what I’m showing my kids now with air fryers oven going to the grocery store. You can make the same things at home especially restaurant fast food by watching TikTok videos, RUclips videos so much cheaper and it’s so much better tasting.

Also healthier... cooking is also therapeutic! When I'm washing dishes I practice " gratitude " by thinking: dirty dishes = food for me and family. And alot of people don't have that.

In Florida, if you get single chicken and no guac, you can get 2 bowls for $18 not including tax though

@@letigre5822 Yeah I can get higher end food for that price or make my own bowl like in the video. Rice is under $2, a rotisserie chicken is $4.99, that leaves $11 to buy everything else.
Double the chicken,bake sweet potatoes,add root vegetables with olive oil and you have your dinner too,add yogurts and fruit for dessert...that is how you change your life,health and save money!!

The only thing I would change is put the guac (and lettuce) in a separate container, so they don’t become warm and nasty.
Yes honestly great idea! I typically don’t put guac and lettuce in my meal prep anyways, but this is a great tip for guac, lettuce, salads, etc.!

@@stoneysscapes7544 it's barely even a change of flavor. It's not like I eat wacamole for the crispness of the lettuce to begin with, it is probably of the least important part of it
Guacamole frozen separately, yes. Lettuce will wilt, decompose, and die at above freezing temps...let alone sub freeze temps. The best option for this crunchy textured veggie, is always cold, crispy, and fresh from the half a week you cut it. Most people enjoy it for its texture, unless you're a fan of watery dirt flavor and beets.
Not trying to be advisareial of course, just putting in a few opinions dotted with some experiences...and yes I eat lettuce😅.
I do rice, chicken, hot sauce, sour cream, and cheese so I assume it would cost even less for me to make this. Definitely a great idea.

My family does this all the time. We even do our own lime and cilantro infused rice with other toppings on the side. It's so much more cost-effective and you can eat on it for a couple days..

Use white frozen corn and light green pepper light light red onion, lime,‘cilantro and and your black beans can be made in the croc pot in low with some light chicken stock, onion,garlic, cumin &’salt if you want.

Update:
used about 2.5 lbs (5.99/lb) of organic thighs, 3 cups of brown rice, 1 can of beans, corn and black beans. I made 7 meals. Thats about $80 at chipotle and I spent $20 + - because I keep a stock of brown rice at home.

FYI certain places sell guacamole in a squeeze container and it's fresher for much longer, though you can freeze it in individual portions as others have suggested

Wholy guacamole is the brand name. You can get it at most grocery stores. In "mild" & "spicy". It's actually cost effective because you use it fresh so it doesn't spoil, and comes 4 little containers per package, pretty good size serving as well!!! And you can always doctor it up with diced tomatoes & onions!!!! (And cilantro if you can eat it-which I cannot. Tastes icky 😢)

You can't put that guac on it if you're meal prepping. 1st, it will be brown by day 2 or 3. 2nd, you don't want to microwave the guac.

They make everything from scratch everyday.. so in chipotles case, not fresher.
I do appreciate that aspect compared to a lot of other fast food chains! Love that you can see it being cooked in the back. I would say making at home is still more fresh in real time because you know the source of the ingredients for the most part, and you’re cooking it yourself. However, I do love restaurants and fast food that cook the way chipotle does.
You guys will have your minds blown when you realize all of asia, africa and middle east eat rice dishes with so much flavor in them its like having chipotle meat but hundreds of different flavors

Me and my daughter did this a few weeks ago because we love Chipotle but it can be expensive especially we both picky and always want double meats so I be spending $24-$27 and that’s twice a week. I swear I literally had left overs of all the makings of a chipotle bowl and told my baby let’s do this she loved especially because I had made chicken breast one night then some steak and she was able to make her bowl with double meat and guacamole 🥑 and cheese 🧀 for free!!

The only thing you have to make every day is the guacamole because it will turn brown in a couple of hours after making it

“I was actually a bit nervous about that too. But if you pack it tight and press down the lid container and remove the air, the guac actually stayed fresh for 3 to 4 days afterwards! maybe a little bit browning on the edges, but the core of the guac stays fresh. Also, if you sprinkle a little bit of lime juice, that helps preserve it longer.”
I would buy premade guac since ur making the rest from scratch

Looks very nice. Only thing I would urge you to do is get glass storage. Plastic, especially when heated is no bueno.
Yes I completely agree. The only thing is I’m cooking upwards of 25 to 30 meals a week and sometimes it’s hard for me to store that much glass in my smaller kitchen lol. That is the dream though!
You can also pop the food onto a plate and reheat it up on a plate
Yes, don’t heat it in plastic EVER!! They found plastic pieces in men’s testes and also pet dogs. They think that is why the birth rate is going down.(recent article )

I used to work at Chipotle. They use a different marinade. Not even the employees are allowed to know what the marinade is made of.

Girl, stop apologizing for being tired. Us SAHM know you feel. I have 3 kids, and its only been a week of them being out of school, and im exhausted! SAHMs dont get the recognition we deserve its never ending. I once had a "friend" tell me she would feel worthless being a sahm because i am. That guac is going bad by the time the 2nd meal hits. I like to premash-mix my guac, and portion it out in 1-2tablespoon batches, in cling wrap. Spin and table closes to keep air tight and store in a freezer bag in your freezer. Pull one out with your meal prep and your fresh guac will be the correct temp and still bright green by lunch.

We make taco rice bowls for lunches - same principle, except we use ground chicken and season it. It heats better in the low-wattage microwaves at work because it's not as dense. But those chicken thighs look amazing!
