It is said that the recipe was created in honour of Anna Pavlova, a Russian ballerina, in the 1920s, when she toured New Zealand and Australia. The pavlova is light and airy, just like a ballerina’s dance performance, hence the name.
Pavlova is a meringue based dessert with a crisp crust, soft and light inside, usually topped with seasonal fruit and fresh whipped cream. Pavlova is a very popular dessert served in summer and can be made into a single or double layer.
To make mini pavlovas, spoon heaped tablespoons or piped swirls of the mixture onto lined baking trays. Flatten meringue into a disc. Bake for 20-25 minutes or until crisp. Cool completely in the oven with the door ajar.
