Hi I just watched your video regarding co inoculation - well done, very informative. I had a question regarding "pushing down the cap after adding the malo. Normally it is suggested to stir 1 to 2x per day to get full disbursement of the fruit. I understand - no mixing or stirring for 12 hours after adding the malo but after that should you continue AF as normal ie stirring 2x per day and or yeast nutrient additions? ALSO - do you leave in the primary container for the entire MLF and not press or remove the grape skins and put under airlock - this may vary depending on batch size - If doing a small batch for example and not in SS fermenter should it be moved before 30 days / anticipated end of MLF? Hi Lori, thank you for your comment. Once ML bacteria are in the tank, you can continue with your normal pump-over or punch down process. As for yeast nutrition, you can follow your standard addition. I do recommend to use Optiflore O, our organic nitrogen nutrient as it is composed of amino acids essential for yeast and bacteria, so you feed both with one addition. The pressing and/or draining should happen when you decide the extraction of your grapes is enough, it is not related to fermentation. Sometimes MLF finishes before AF, which is ok if yeast is still healthy and going. email me for more questions: eglantine.chauffour@buchervaslin.com
