3:20 I worked in the officer's and petty officer's mess, crew and staff messes too. The basic menu is no different, so fish is the same for everyone, desserts too. For petty officer's eatery and officer's one there were prosciutto and mozzarella, inaccessible to ordinary employees. They were also served pasta in two different versions for lunch and dinner, that is, only 4 different pastas per day. There was an absolutely original menu in the captain's mess, but I didn't work there, I only saw the dishes on the tray when the waiter passed us with it. The entrance to the captain's mess was through the officer's mess. The main difference was in the multicolored cream soups. The breakfasts were the same for everyone except the captain. I don't remember about the captain anymore, it was a long time ago :)
Our crew and staff mess was combined so it was just mainly all rice and curry and every now and then burgers or hot dogs. Apparently we did have an officer mess (I think by the main dining room) but I never went looking for it.
On Disney there’s only the crew mess which is we’re everyone eats and officers mess, we always had somewhat ok food, the best part was each night at 10:30 everything that was left from the guest restaurants would come down to our crew mess and it would be called late dinner.
So the crew gets Mac and Cheese dinner while the passengers are eating steak and lobsters? Did you ever see steak during your time there? I hear rumors that you can get restricted to crackers and cheese for bad performance, is that true?

I am surprised they don't simply serve the main dining room menu in the Officers' Mess. Logistically it is probably simpler and cheaper than having have a separate kitchen or cook line for the Officer's Mess. There aren't that many officers anyway (relative to the passengers) and the additional food costs is probably absorbed by the inevitable ~20% waste from the main dining room anyway. It is not like you can prepare exactly the right number of menu items of the right kind there; you will over provision and throw away stuff.
I'd be curious as to where the musicians and entertainers fall into this structure. I'd imagine as staff. Same for the real sailors, the ones that run the engine room and all of the auxiliary systems. Skilled labor, I guess you could say. Crew? Anybody know? Engine room crew consist of all categories and is based on hierarchy as anything else on a vessel. Chief Engineer as the highest ranking officer in the technical department then you have 1st/2nd/3rd/4th engineers that is also officers, then you have crew which can be fitter, motormen, oiler, wiper. You also have electricians that is officers and you have reefer/HVAC engineers. Deck crew is similar with Captain who is the highest ranking officer in department but of course he is also in overall charge of the vessel.
On what cruise ships is all that you talk about? Im starting my first training on january for river cruise ship. Kind a scared right now,after your videos. Planning to take food instead of clothes on board😁😁
Cruise ship mess reminds me very much of the three stages of mess onboard U.S. Navy ships... practically identical with the exception of MUCH MORE visible stainless steel everywhere in the crew mess. LOL!!!

I went on a cruise once. It was my senior trip back in 1999. We boarded in LA or San Diego California, I can't remember, I was in the back of the bus. We went to Catalina island and Ensenada, Mexico. It was nice but the best food was available 24 hours a day, Pizza!!! The Pizza was the best I've had. I should have asked for the recipe and techniques for preparing such perfection. With that I could have opened my own pizzeria.

It cracks me up having started at the very bottom of my professional Maritime career and working my way up to chief engineer I have always ran into the new person on board boat that expects to be treated like the captain and then complains about it there's numerous reasons why the masses are different number one main is expensive to volume three it gives the younger lower rank personnel to incentive to be a professional Mariner and Excel in their career not only is the pay better the food is better the accommodation is better everything is better it takes a lot to be coming officer this is one of the big things that I see a lot of people particularly young people don't seem to get don't seem to understand most people on cruise ships will spend a year or two and then move on the ones that stay and become professional Mariners are the ones that will move up and get those nice cabins and those nice meals in the big pay
I was curious about whether or not you were allowed to eat in "lower rank" Mess Hallls, or if you were limited to your own rank. Though honestly, I don't even know how the rank system works. Do you receive a mid range rank just for working in the shops, even if you haven't earned it? I just know that if I were to work there, I'd like the option of eating food that isn't just meat and starch. /shrugs
It obviously has to be this way, because it's not the Navy were you earn rank, and even there in the Navy as a civilian specialist contractor I would be assigned a rank-equivalent. Enough rank to eat in the officers mess.
You probably would be “allowed” to go down a peg and eat at other mess halls. Although it’s not fair as that would contribute to wait times and double standards. Plus I’m sure the better mess halls are nicer anyway.

Also you said that VV had eliminated the stripes system, so, does that apply to the mess as well? or do they still have crew, staff and officer's mess?
I really want to work on ships but I can’t eat gluten (cross contamination is fine but I can’t actually eat anything that contains gluten). Have you seen anyone else like this on board? Do they cater to that for crew? I could eat bread, pastries, pasta etc like you said they have a lot of.
I don't know for sure but I've been in the service industry for decades and I would bet that if you're kind and friendly to the cooks and explain your situation and ask nicely, they would be more than happy to go above and beyond to accommodate you. Cooks generally have a passion for feeding people and want to make them happy. Of course, if you have a doctor's note saying you have celiac disease (which I think not since yu said cross contamination is ok) your company should be required to make gf food available to you at all times. But since cross contamination isn't an issue, you should absolutely be fine!!!
Can listen to you talk all day. Was doing “robot” type data manipulation work and I just put the phone down, didn’t watch (sorry), just listened. Interesting inside look into the job though, not like I’d do it. But thinking of a cruise once everything opens up. I always try to learn what people are going through when they are doing customer service for my benefit. God forbid I be one of THOSE people.

We've been on a lot of cruises, and I don't recall a single staff or crew member looking like they were starving or sickly. How did it go?

I live in Louisiana in the US and I didn't recognize most of the veggies you mentioned.
