We’ve always used spicy Jimmy Dean sausage and add some Worcestershire sauce in our mixture too. Took the recipe up to my in laws in New Hampshire a few years back and my MIL immediately pulled out some real maple syrup as a dipping sauce. My mind was blown, had never even considered that. Makes them even more “breakfast-y.”
My wife used to make these for EVERY party - Super Bowl, birthdays, World Series, all of 'em. She even took them with her when she worked at the polls on election day, and everyone loved them. THANK YOU for doing this, because I can't find her recipe lol

I made some chorizo sausage balls a couple of months ago. Absolutely delicious. I have also made half sausage, half bacon. Sausage balls with candied Jalapeño and a hot honey glaze. I have made breakfast sausage balls using a Blueberry muffin mix instead of bisquik. I plan on making garlic sausage balls with 30-40 cloves of roasted garlic.
The bisquick version with Jimmy Dean hot sausage has always been the New Year's Eve and Day traditional favorite. I will definitely try this version and on the smoker! I actually like hot Chinese mustard on the side, or Chalula, and Kathy always liked Ranch dressing.

i would do one with some sage, aiming for like a jimmy dean flavor profile, with some maple syrup. maybe in like a frozen ball in the middle before cooking?

its been years since I have had these. I just used bisquik mix at the time but I am a better cook now and know whats in all those mixes and can make it cheaper myself. But these are delicious! I just haven't gotten myself a meat grinder to start grinding my own meats yet.
Brandon, didn't see your knife roll listed on the things you use. Is it a custom one off or can it be purchased online? I've been looking for one but most are poor quality and the ones highly rated are into the hundreds of dollars. BTW Great recipe! We make those for our crew to snack on when setting up in the wee hours of the morning for all day smoke at tailgates.

PPS should have used a torch on them at the end for the colour bit cheify but presentation is important (( at least on you tube :-))
Your cheese blocks always looks like the vac seal wrap is loose... i dont think its supposed to be loose, the blocks here are all tight against the cheese

Looks great. We like to cook ours a little longer to get the bottoms crisp. Also a garlic-butter wash after smoking ads a nice flavor!

I do them low and slow on the pellet grill. I also add cream cheese in addition to the shredded cheese.

I ran out of casings for my pepperoni sticks and made meatballs from the rest. Smoked and dropped into the crockpot with marinara sauce. Huge win.
