Music usually follows patterns and a certain logic. It is true that it does not always this. What's more, it's interesting that it doesn't always follow them.
But, from the point of view of the dancer, if music follows certain logic it makes the work of the dancers much easier.
In this social dance with live music (so the dancers don't know what the solos will be like), Thomas and Carole seem to have choreographed some parts. But, "simply", what happens is that they intuit the discourse that will happen, then they put some steps that they think will fit into it and... magic, everything comes together as if it were prepared.
I am particularly referring to the fragment from minute 1.24 to 1.40.
