Loaded Tatertot Taco Bowls

  • Ingredients
    • 1 bag frozen tatertots
    • 1.5 lbs ground beef or turkey
    • heavy drizzle of olive oil
    • garlic salt
    • cumin
    • chili powder
    • paprika
    • oregano
    • taco seasoning
    Toppings
    • shredded colby jack cheese
    • pico de gallo (diced tomato, red onion, jalapeños, cilantro, lime juice & salt)
    • guacamole (smashed avocados with a few spoonfuls, more or less, of pico de gallo)
    • sour cream
    • sliced limes
    Directions
    - preheat oven to temperature indicated on lateriot packaging
    - pour tatertots in a large bowl then drizzle heavily with olive oil before adding garlic salt, cumin, chili powder, paprika & oregano
    - stir tatertots until they're all evenly coated then transfer them to a lined baking sheet
    - bake according to directions on packaging
    - add meat to a skillet and cook until done; drain any grease in the pan
    - add taco seasoning then follow directions on the packet
    - once tatertots & taco meat are done, assemble bowls by layering tatertots, taco meat, shredded cheese, guacamole, pico de gallo & sour cream
    - serve with lime slices
