Dundee cake was my late grandads favourite, he's been gone for 35 years now and I still remember his joy at seeing this for his birthday and again at Christmas/yule. So I am going to make my first one this year in his honour.
I've been trying to find this cake recipe now for a few years, but for some reason I could never remember the name for it. I married an American when I was 19,we left for the states and lived here ever since. Always remember round about Christmas time my mum would make this and I've been craving this cake lol, ever since then . I'm so glad woo hoo, finally found it and plan on making for the festive season. Thank you again, and so glad i stumbled across your utube channel. Hi Helen I made your Dundee cake last year with great success. It was delicious. I plan to repeat the recipe again this year and take it up to St Andrews, Fife where I am going to spend Christmas with my son. Hope it travels well as I live in the South of England.

Thanks Helen. I made my first Dundee cake a couple of weeks ago - now sadly all gone - and I'm in the process of making another. I'm trying a variation to the recipe I've used by soaking the fruit in the whisky for 3 days before using it - more than a splash. I'm also trying a 50:50 mix of light and dark sugar as previous fruit cakes I've made have had more flavour using dark sugar. My first, and only, Dundee cake seemed lacking in flavour using light brown sugar and a 'splash' of whisky. Anyway this will be my variation on Dundee cake and I think I might just add a wee bit of Dundee marmalade, which as we know is where Keiller's marmalade was first made way back in the early 1800's.

@@TheOrkneyNews I've hated not having a video to watch lol but it's great you've started making them again 😊. I've never had Dundee cake, I know it's her Gracious Britannic Majesty Queen Elizabeth II favourite cake to have. Does it taste like christmas cake or am I just being stupid lo.
@@jnicholas-windsoramyisrael46 it is similar to a Christmas cake however you can taste the orange zest and the marmalade giving it a different citrus flavour. Re her Maj, perhaps she'll come across our video and give it a bash ;)

You should be able to freeze the cake as most cakes freeze well. Just make sure you wrap it well in clingfilm and freeze in an airtight container. Not sure if you've seen the Christmas cake videos, linked it in. ruclips.net/video/1czc-Gj9-Bk/видео.html
I just use what I have which tends to be salted. I'm always intrigued when looking in old recipe book as they often add salt so by that reckoning salted butter will be fine. H
Heh there, if you are meaning instead of the marmalade I can't really see why not, however I would suggest only using one tablespoon as you won't want it to over power the other flavours. Let me know how you get on with it. Good luck H
Hello Helen, thanks for the recipe. Just a little tip if I may, to stop your mixing bowl moving about, place it on a folded, damp tea towel, it'll stablise it.

How long does Dundee Cake keep once cooked? Is it like Xmas cake - keeps for ages?
