I have Cajun friends in deep south Louisiana. We had gumbo and beer. Eat for an hour nobody said a word! Same with the crayfish and potatoes/whole corn and cold beer. Wow what some food. Nothing like it!
Awesome! 👍 I got to favor a cheap thin carbon steel Chinese vegetable cleaver for that type of cutting. I never had the patience to work a roux to that deep color, now I regret it. These parts, scallions or spring onions is what we call that super flavor finisher. Some years back, my youngest daughter made a batch of that fantastic food. Nicely done, no rice for me these days.
Thanks for the walk through. I didn't realize that it was so straight foraward to make. Can you substutute the bellpeppers for chillies? I didn't know the hen was different for making broth. I am going to need to get some of that seasoning and find out what they have in it. I didn't remember that Sean was making knifes. It looked like he did a nice job on that chef knife. It was a joke, Sean gave me that knife, just messing with him. I have never seen chili substituted in gumbo, as long they not aggressively hot, don’t know why you could not. Gumbo is easy, the roux is the hard part. But you can buy our type roux on Amazon and be just as good, save yourself some head ache.
