When we harvest wild garlic on our friend's farm we only harvest them in very small clusters so that we leave a lot of area not harvested so that it can reproduce. We have been doing it successfully for years. His patch is huge covering a very large area. We know harvesting wild garlic is controversial but if harvested correctly they will be available for years and years to come.

If in the UK, wild garlic is invasive so harvest as much as you want.
