I grew up in Southern Moravia region of Czechoslovakia before immigrating to Canada, days after the Russian occupation. My grandma and my mother made delicious koláče, so it's no surprise that I learned how to make them at a pretty young age. I don't remember ever seeing any written recipe. I used to help my mom to make them. And one day, I was ready to make them all by myself. I have been making them ever since. I put the sweet cream cheese filling inside the kolach and enclose it in the dough, almost like a dumpling, with the seam down. And then I top each koláč with half an apricote and gently press it into the koláč, which flattens it. I sprinkle them with a crumbly topping called drobenka (made by rubbing together cold butter/flour/icing sugar with my fingers). I like to add vanilla extract and lemon zest to both the dough and the cream cheese filling. I also mix golden raisins into the cream cheese mixture. I wish I could send you a photo of my version. I love your video and your variation on Czech koláče. What region of Czechoslovakia was your grandma from? Every region has their own variation. My recipe makes 44 kolaches. I share them with my daughter's family and my neighbours. Coincidentally, I made them just 2 days ago. They're all gone. You can never have just one. Right?

I didn’t have all purpose flour, so I used the bread flour I have, and they turned out so lovely! The pastry is light and formed perfectly around the fruit. Loved the show and recipe too. I have my own mom's recipe but will try yours, you can never have too many kolache recipes. My husband isn't as nifty in the kitchen with me but he is superb at keeping the dirty dishes washed for me. By the way I didn't catch how much lemon juice went into the blueberries, was that 1-2 tbsp?

Hey! Thanks for writing back. We have a restaurant here in WI. that makes them and also sells them at Farmers Markets. They are round like a roll and stuffed with breakfast items like sausage, egg, and cheese. They are delicious but small and $4.00 each. They can be frozen and taken out when needed, so I would love to make some. Thanks for your recipe! Also found you today and subscribed!
My maternal grandmother was Czeck from Iowa and made them as well only she pronounced them differently with a "chez" sound instead of "cheese" sound at the end. She's been gone for about 20 years, but I never had her recipe, so I can't wait to make these. Thank you!

I miss those, real Polish (aunts husband's mom) recipe did have mashed potatoes in it and the dough was thinner. But any would taste good right now
