While common interests certainly can be something that kicks off a relationship, I think shows like this are so cringe is because they make it seem like that common interest is the whole of the relationship.
Don't be afraid to date people who have different interests. My partner of almost 5 years now and I have very different interests. I never would've watched Gilmore Girls or Pride and Prejudice without her, but I absolutely love both those things. And she really likes Spy x Family and Hunter x Hunter.
I think it’s the “x” in each title that does it for her. Try Pride x Prejudice, combine these worlds.

I'm a big proponent of the like "we fill in the gaps for each other" kind of relationship, I don't need a mirror of me with the same kinds of likes and dislikes, don't wanna stay in a bubble my whole life.
Exactly. The idea that you're going to work well with another person for the rest of your life because you both like Star Wars and DBZ is, well, incredibly shallow. Relationships are about making priorities and major life decisions, and having compatible or mutually understood ways of being, of experiencing things together and lifting each other by working together. Having mutual interests can contribute to that, but it's not the end goal.
I still kinda find it weird to find a dating section at a convention whenever I visit one.
I'd never date at a convention. Especially not someone as shallow as the clearly rehearsed people on such shows.

As someone who actually did this sci-fi speed dating it was a lot of fun, but the hard part is how unlikely you are to find someone to connect with.
I think the premise is flawed in the sense that some people are so focused on finding someone with the same interests as them that they are not really that interested in getting to know the other person. In that sense this could work out more for the people that are just too worried about others thinking they're weird to relax, get to know the other person, the kind of humor or hobby they have and instead of being all "she needs to know everything about superman" be more like "Ok, maybe we can show eachother our favorite shows"
