Our cafe has been hugely impacted by the current pandemic, but we are beyond grateful that we still have some regular customers who keep supporting us through these difficult times. - It's great that your cafe has a Friday casual wear policy
- PUQpress and Anfirm SP2 look so much easier to use than manual methods. If I ever set up my own cafe, or work for one, I'd like to use those too.
- As for milk brands I definitely prefer Bonsoy as I often drink soy mocha with honey, and I've noticed when cafes use Bonsoy it tastes the best.
I'm really enjoying these videos. The shots, editing, the storytelling, the music... just very well put together and really gives a behind the scenes look into the world of the barista. Thank you! I'm in Sydney too so I'll have to drop by and say hello, and order a soy mocha with honey soon.

I know it's impossible. If suppliers don't carry, you're out of luck. If that costs more, you wouldn't bother....haha.

Hi Bee, great video as always. With the coffee beans you use, how much of a dose/yield do you do? La Marzocco Linea is an excellent machine. And I am from the town on the outskirts of Florence where la marzocco factory is! All best from Melbourne!
Thank you! We are using our own blend, so the recipe is slightly different from other cafes that I used to work, the recipe for our own blend is 23grams, 25-26 seconds and 46grams out :)

Hello Miss, I thoroughly enjoyed your last two videos and look forward to watching the rest. I was especially moved by this vid’s conclusion remarks that summarize the profession neatly and beautifully - in fact I almost burst in tears. And lovely music selection and editing only add to my enjoyment.
I really like you have a Linea Classic and an SP II in your cafe as these are perfectly OK for a heavy-duty cafe. These days even in my city of half of a milion (Brno, Czech Republic, opposite side of the globe) the fancy machines and grinders (Nuova Simonelli/Victoria Arduino a Mythos 1 and 2 or latest additions to La Marzocco’s line-up such as KB90 or Linea PB) are very common sight while baristas’ skills or beans struggle to keep up.
How many shot do you make on average on a busy day? It is said some of the busiest Australian coffee shops (Sydney, Melbourne) routinely reach 1500 - 2000 mark. As far as I know, the mightiest cafe bar in the volume is Milano Centrale’s VyTa where, I was told by a barista, they regularly make 5000 shots a day on a 4-group La Cimbali and a Robur Mazzer :-) You rarely see outside of Italy putting the bag(s) into the hopper to release the beans gradually or just in very select and busy European cafes.
I use only fresh full-fat (whole) cow’s milk (3.5 - 4 % milk fat, non-homogenized) and am bit, to be honest, sceptical towards soya, almond or oat as these often serve more as a personal/fancy statement than a dietary or health’s requirement. Maintaining a roster of six differents milks. Oh my... And even within the full-fat there are profound differences based not only on fat content but also on the season, the animal’s feed and a number of other factors. So I tend to choose best one available for my E61 single-group machine as steaming it is a pure delight then. By the way: in comparison with Linea’s powerful wand, the steaming takes forever on your home Breville. :-) And why, why putting the chocolate into the cappuccino (in another video) when you have the beans from Sasa Sestic, world barista champion?
Being an espresso and cappuccino purist, I am rather sceptical towards cocoa, cinamon and other topping but understand majority of customers like their coffees this way.

Yes, we usually do around 1000-1500 shots a day, but due to current pandemic, we have lost about 40% of our regular customers (this is so sad). Yes, I personally prefer fresh full-cream milk instead of other type of milks too. But, milk alternatives are the trend that can't be overlooked in Australia, as more and more people now switch to plant-based milk.
And cappuccino in here is always served with chocolate powder on the top. It's like the standard of serving a cup of cappuccino in Australia :)

Bon Soy is definitely more popular than So Good soy milk for most cafes :), but you can find a lot varieties of So Good brand across supermarket in Australia :)
I'm from india and I'm coming to Australia by this year and I would love to work in barista, but I have no skills for it so how would I train my self to be a barista ?
You can apply for barista course in here first to learn the basics. Unfortunately knowing the basic is not enough to jump straight behind the machine as a barista as most cafes here required someone with enough experience. My advice is to start from other areas in the cafe first, like customer service or kitchen hand position. Then slowly, make your way up to the barista position. That's how I started my career as a barista. Once you start and be willing to keep learning, getting the barista position won't be that hard. Hope it helps :)

Our working period also from 7am-10pm cut down to 8am to 8pm and from manpower of 4 become 3,even 2(for those off peak,but still lot’s of person)
I also enjoy talking with my customers as well,but indeed the multitasking is a must skill for those who want to work within cafe(we actually have Low paid and work for the hardest ),as our cafe also serves delicacy like noodles as well,so sometimes we also need multitasking like cooking the noodles,packing noodles(to specific measurements for one serve),cleaning the table,washing the plates,and serving cafe as well.
It is actually quite interesting to watch your video and I could learn and observe how others cafe work as well(although mostly the same,but we also serve food noodle,toast and etc)

What brand of milk do you use? :)
Make sure you use almond milk that specially made for coffee. And when steaming the milk, make sure it spins in a circular motion to make the milk tastes smooth :)
