It’s a medical diet which manages Inflammatory Bowel Disease (Ulcerative Colitis, Crohn’s, Celiac, IBS, Diverticulitis, Autisme) 50% of GI specialists in the USA use it a primary care). I’ve failed more than succeeded with baking on this diet. It’s restrictive, but are allowed ripe bananas (nice cream with fruité nuts etc) medjool dates and honey are allowed, (no other sweeteners permitted). Nut flowers are allowed too. My biggest flop are bread and cakes, as they end up super gooey uncooked kind, or hard as rock) No worries if this is too much to ask, but do take the time to read about it. Maybe one day, you will want to try. Oh, the diet is not vegan, but vegans on this diet can do very well with proteins like red split lentils. All has to be done from scratch. No short cuts.
