Man ... every sourdough recipe i've tried so far involves doing some sort of hand folding or laminating or whatever every 30 or 45 minutes for a few hours... I really want to try this recipe it's so simple. And if the bread comes out as good... which I mean it's Paul Hollywood, so it should. This recipe might be my ticket to having sourdough more often. The loaves i've been getting with other more complicated recipes have been great, but they're a pain in the ass lol. This looks truly an easy bake. So i'm super excited to try it!
Thanks Paul for the professional tips on sourdough mixing as I wondered why I wasn't getting a higher rise so followed both episodes to see and after adding more time to get a smoother texture and resting overnight I baked a loaf this morning and it turned out perfect. So after a years break from sourdough I am back in the swing after getting my mix up and going strong again after re-hydrating it.
Thanks for all your great recipes Paul. I found this one very challenging as all I got was a very wet dough that I had to add flour too. After experimenting, using 275ml of water worked a treat. Maybe 375ml is a typo ?
Different lvl of hydration. Different flour reacts differently. Higher hydration, harder to work with. U Need skills. I had same problem. Well once it didn't worked out. But got answers to my question 5 min ago 😊.
I'm rubbish at baking. I'm twice as bad at making bread. I either over mix the dough or under mix. It's hard for me to make out when I should stop or when I should keep going. I will see you in part 3 and be completely jealous of your ability to make sourdough bread. 😁
Instructive video thanks, I just bought a used copy of Paul Hollwoods Bread Book and am surprised that quantities ingredients are different and importantly the second rise is eliminated ;-) and all done by mixing machine, makes life easy especially if I had a machine. We’ll adapt;-)
I took a loaf of sour dough out of the oven a couple of hours ago. Can’t wait to cut it and see what the inside looks like. Sourdough baking sure is a journey in baking. I’ve yet to get a perfect loaf!

I see it took quite a while using the mixer with hook, so I'll need to simply knead flour/water for a while to become soft-pliable, then add the sour? thank you for making this... I am always kneading my sourdough by hand, so I have a feel for when it is perfect, and it does not take long until it is ready when you use the slap and fold method. I am not sure why you knead your dough for so long in the stand mixer ?
Great mini series of how to videos... however, given that it's for beginners, I would much have preferred instructions without the need for a fancy industrial mixer!

It says 500 ml of flour which converts to 264 grams, meaning I'm adding more water than flour to the recipe? Is it 500 grams of flour to 375 ml (or grams of water}? ML water is the same but ml flour converts differently to grams and my scale only shows grams. Help me if I'm missing something! Thanks.
I made this using the ingredients listed and the mixture did not turn to dough. My husband said that you dont measure flour in ml! Is there the correct ingredients listed anywhere?
Cannot see the average person managing to follow this recipe. If you use 150 g of sough dough with the tepid water at 375g I found it works out to 117.64% saturation and that is not easy to handle however long you might have been baking bread! Bob in Oxfordshire…
Bake with jack uses 100 grams sour starter 450 grams flour - I use organic bread flour 310 grams water 8 grams salt These measurements may vary slightly from different people depending on the hydration
Edit: That doesn't work either the ingredients are a mess in both videos. Guess I just figured out why mine hasn't been turning out. 500ml of flour instead of grams! Consistency would be nice since this is supposed to be for beginners.

Did you use 500ml of flour or 500g of flour in your recipe? The instructions are listed to add more water than flour if it’s 500ml.
