  • When I was a kid, my parents have always made me steam eggs. Sometimes it is steamed nice and perfect, jiggly, and smooth. Sometimes they are rough and completely dry. So I did my homework to find out what causes that and how do we make the best steam egg that is smooth and melt in your mouth. Check this out for a fail-safe steam egg technique!

    I did a sweet version of this with eggs and milk instead of water in a 1:4 ratio, and it made a perfect flan custard. Genius recipe.

      I think that's also what they popularly call Leche flan in some countries. Ohmy I better try this as well.

      He mentioned eggs and milk.
      Most probably is 1 part milk : 4 part eggs.
      But u can adjust the milk (liquid) to figure what works best for you.
      More liquid = more softer and silky.
      But also means lesser egg to make it set and longer cooking time.

    Wow, my family as a similar recipe, except my grandma told me that the ideal ratio was 1 part egg to 1.5 part water, seems that the ratio doesn't matter, but the temperature. You learn something new each day.

      The water part does play a role in the texture.
      While temperature determines the doneness of it

    My great grandmother used the eggshells to measure the water, so it was always exactly 1:1. Good tip about the heat! I get bumpy eggs sometimes when I'm overly eager for 水蛋... :)

    Thanks for the info. I watched your video AFTER I made my very first steamed egg LoL
    I must confess that I cheated a little bit as well. I live alone most of the time hence 3 or 4 eggs is too much in my book. So... I seasoned one egg, and added it to my instant miso soup which called for 2/3 cup water. The beautiful egg that looked like silken tofu was floating on top of the soup BUT it was amazingly delicious!!!

    Just cooked this, it came out perfect and had an incredibly smooth texture! The only downside of this dish for me is that the egg flavor is very toned down through the water but I have family members who would even prefer that, so thank you very much for sharing this!♡

    Just to share a tip ….try using boiled water instead of tap or unboil water...there's not much bubbles after beating the eggs...happy cooking guys...btw Ethan great and simple video...keep up the good work.

    Hey ethan,..why u not cover it with wrapping plastic,etc.. how about water vapour which will drop on the egg?! Will be like a moon?! Are u sure it will work that way?!

      Yes
      High heat to bring the water to a boil
      Then reduce the heat down to only a simmer

    haha! Thanks for the tips! I'll attempt it again maybe for tonight's dinner. In all my life, I've only succeeded once in making perfect steamed eggs. Thankfully, that was the time I made it for the first time, for my beloved grandma. Pure luck for the both of us! lol
    Btw, is it the same methodology if I want to make the sweet steamed egg dessert? I flunked it many times...

    I put almost a tablespoon of salt and it would’ve been ruined if I didn’t added another egg and 3 tbsp of water. I messed up with leaving the lid on completely but it’s still soft under the rough bumpy top layer. I also added dried shrimp and green onions in the last two minutes which made up for the salt. I like this recipe with sesame oil too.

    How to get the stains from the steamed egg off the stainless steel plates? I find that egg is always stuck to the plate and hard to get off.

      What I usually do is soak them in water while I am eating, then once I am done eating, simply use a scrub and they should come right off
