- When I was a kid, my parents have always made me steam eggs. Sometimes it is steamed nice and perfect, jiggly, and smooth. Sometimes they are rough and completely dry. So I did my homework to find out what causes that and how do we make the best steam egg that is smooth and melt in your mouth. Check this out for a fail-safe steam egg technique!

I did a sweet version of this with eggs and milk instead of water in a 1:4 ratio, and it made a perfect flan custard. Genius recipe.
Good to know!
I think that's also what they popularly call Leche flan in some countries. Ohmy I better try this as well.
Thanks for the demo and esp the ratio of egg and water/milk, Ethan Wong.
What do you mean by 1/4 ratio? Sugar quantity?
He mentioned eggs and milk.
Most probably is 1 part milk : 4 part eggs.
But u can adjust the milk (liquid) to figure what works best for you.
More liquid = more softer and silky.
But also means lesser egg to make it set and longer cooking time.
@@3thanwong thank you
Thank you, your method is just amazing and it turn out perfectly, smooth and nice.
Omg this video was so easy to follow and the end result was just perfect. I'm going to use this to make the sweet version next time. Thx!
Glad u like it! Yeap, be creative! You can make Japanese Chawanmushi with this technique too!

My grandpa used to make that for us. Such good memories. Thanks I will definitely make this.👌
Ok, gonna try it!
Cooking it up rn looks fireeeee
Wow, my family as a similar recipe, except my grandma told me that the ideal ratio was 1 part egg to 1.5 part water, seems that the ratio doesn't matter, but the temperature. You learn something new each day.
The water part does play a role in the texture.
While temperature determines the doneness of it
Thank you. Will try
My great grandmother used the eggshells to measure the water, so it was always exactly 1:1. Good tip about the heat! I get bumpy eggs sometimes when I'm overly eager for 水蛋... :)
Thanks for the info. I watched your video AFTER I made my very first steamed egg LoL
I must confess that I cheated a little bit as well. I live alone most of the time hence 3 or 4 eggs is too much in my book. So... I seasoned one egg, and added it to my instant miso soup which called for 2/3 cup water. The beautiful egg that looked like silken tofu was floating on top of the soup BUT it was amazingly delicious!!!
Omg sounds delicious, I’ve had it before 😋
Thanks for the tip
I just made it... my breakfast this morning.. ❤
Nice 👍🏻
I just made it.. i eat it with my favourite green tea so yummy 😋
My kids love this apecially for the rice so yummy!!!

Thank u so much sir chef
Just cooked this, it came out perfect and had an incredibly smooth texture! The only downside of this dish for me is that the egg flavor is very toned down through the water but I have family members who would even prefer that, so thank you very much for sharing this!♡
Thank you!!!

Thanks for sharing dont know how to steam the egg always gone wrong
Most welcome! Glad this helps!
Thx for the video
Thanks for the video! I made it today yayyy! Just wonder can I use egg 1: water 1. 5 to achieve softer texture?? 😀
U can try that. Try experimenting them!
Just to share a tip ….try using boiled water instead of tap or unboil water...there's not much bubbles after beating the eggs...happy cooking guys...btw Ethan great and simple video...keep up the good work.
Nice! Will try it next time! Thank you 🙏🏻
Lim Eric yep fail proof method
Wow this is skill
i have a club and i am going to make this!!!!!
Hey ethan,..why u not cover it with wrapping plastic,etc.. how about water vapour which will drop on the egg?! Will be like a moon?! Are u sure it will work that way?!
Hi thanks for the wonderful tips! How about the fire temperature?Need to on big fire there after lower down the temperature?
Yes
High heat to bring the water to a boil
Then reduce the heat down to only a simmer
haha! Thanks for the tips! I'll attempt it again maybe for tonight's dinner. In all my life, I've only succeeded once in making perfect steamed eggs. Thankfully, that was the time I made it for the first time, for my beloved grandma. Pure luck for the both of us! lol
Btw, is it the same methodology if I want to make the sweet steamed egg dessert? I flunked it many times...
Hey 👋🏻
Yes, it is the same for egg dessert. The key is not to let the heat goes too hot.
@@3thanwong Got it. I'll take note of that.
*Hi Ethan, today I have made steam egg with soy milk... it's very smooth and silky... Thanks* 😁😁
Great! I am happy to know this! 😁
I put almost a tablespoon of salt and it would’ve been ruined if I didn’t added another egg and 3 tbsp of water. I messed up with leaving the lid on completely but it’s still soft under the rough bumpy top layer. I also added dried shrimp and green onions in the last two minutes which made up for the salt. I like this recipe with sesame oil too.
Edit: grammar
its okay, just try again and u will be fine!
Jiggle, Jiggly, Jiggling
the best one i've seen so far! awesome! thanks. my 8 yo begged me to make this. will do now.
😆😆😆 go make more!
Where can I get the utensils used?
蒸蛋~不可以用水喉生水加入蛋內,一定要凍滾水:
为什么呢?

Haha 😆 yeah let her know and show her my channel! 😆
@@3thanwong I will😂
How to get the stains from the steamed egg off the stainless steel plates? I find that egg is always stuck to the plate and hard to get off.
What I usually do is soak them in water while I am eating, then once I am done eating, simply use a scrub and they should come right off
Ohhhh..
