Hi, thank you for your question ! This is in case the person needs to get a surgery. When the anaesthetic is used, your body's reflexes are temporarily stopped. If your stomach has food and drink in it, there's a risk of vomiting or bringing up food into your throat. We hope this answers your question :)

If they need emergency surgery and need Anaesthesia, they could choke on it during the surgery and suffocate. That’s why before a surgery you’re told not to eat anything 24 hours before and not to drink anything 3 hours before

You got to just sit and relax
