How to Make the Perfect Egg Biryani | Ultimate Dum Biryani Recipe |

    Ingredients:-
    For Boiling Biryani Rice:
    Water
    6 Cloves
    1 Black cardamom
    7 Green cardamom
    1 Cinnamon stick
    2 Star anise
    1 tsp shah jeera
    Salt
    Soaked rice
    Chopped coriander leaves
    Chopped mint leaves
    Fried onions
    For Marinating Eggs:
    Boiled eggs
    1/2 tsp chilli powder
    1/2 tsp turmeric powder
    Salt
    For Marinating Curd:
    200g curd
    1 tsp red chilli powder
    2 tsp coriander-cumin powder
    1/2 tsp turmeric
    1/2 tsp cardamom powder
    1.5 tsp biryani masala
    Salt to taste
    For Frying:
    Oil
    2 thinly sliced onions
    For Preparing Biryani:
    Oil
    Whole spices: cinnamon stick, cloves, star anise, cardamom
    1 tsp cumin seeds
    2 finely chopped onions
    2 tsp ginger-garlic paste
    1 tsp green chilli paste
    2 finely chopped tomatoes
    Salt
    Fried eggs
    Chopped coriander leaves
    Chopped mint leaves
    Boiled rice
    2-3 tsp desi ghee
    Few drops of kewra essence
    Brown onions
    Boil Biryani Rice:
    1. Wash Basmati rice thoroughly 2-3 times and soak for 30 minutes.
    2. In a large pot, fill with water and add 6 cloves, 1 black cardamom, 7 green cardamom, 1 cinnamon stick, 2 star anise, 1 tsp shah jeera, and salt.
    3. Boil for 10 minutes. Remove all the whole spices except shah jeera.
    4. Add soaked rice, chopped coriander, mint leaves, and fried onions.
    5. Boil the rice until 90% cooked. Switch off the heat and strain the rice.
    Marinate Curd
    In a bowl, mix 200g of curd with 1 tsp red chilli powder, 2 tsp coriander-cumin powder, 1/2 tsp turmeric, 1/2 tsp cardamom powder, 1.5 tsp biryani masala, and salt to taste. Set aside.
    Marinate Eggs
    Slit boiled eggs and marinate with 1/2 tsp chilli powder, 1/2 tsp turmeric powder, and salt.
    Fry Onions and Eggs:
    1. In a pan, heat oil and fry 2 thinly sliced onions until brown. Remove and set aside.
    2. In the same pan, fry the marinated eggs. Remove and set aside.
    Prepare Biryani:
    1. In a large pot or kadhai or handi, heat oil and add whole spices (cinnamon stick, cloves, star anise, cardamom).
    2. Add 1 tsp cumin seeds and let them crackle.
    3. Add 2 finely chopped onions and fry until golden brown.
    4. Add 2 tsp ginger-garlic paste and 1 tsp green chilli paste. Cook well. Add more oil if needed.
    5. Add 2 finely chopped tomatoes and salt. Cook until tomatoes are well done.
    6. Add the marinated curd mixture and cook on low flame until you see oil separating.
    7. Add the fried eggs, chopped coriander leaves, and mint leaves. Cook for 5 minutes.
    8. Remove the eggs and masala, leaving some masala in the pot for layering.
    Layer and Cook Biryani:
    1. Add a layer of boiled rice in the pot.
    2. Add a layer of the egg and masala mixture.
    3. Add the remaining boiled rice, covering the eggs completely.
    4. Add 2-3 tsp desi ghee, garnish with coriander leaves, mint leaves, a few drops of kewra essence, and brown onions.
    5. Cover the pot with a tight lid and place something heavy on top.
    6. Cook for 15 minutes. Serve hot.
