- Hey, Rob Martinez here. Where should you eat in Lyon, France? A bouchon should be at the top of your list.

On today's episode I highlight Lyon, France, the gastronomic capital of France. I head to a Bouchon to try a typical Lyonnaise menu: charcuterie, salade lyonnaise, quenelle, and tarte aux praline.

Tip for eating in France from a Frenchman: when you see that logo on the right at 11:50, it means that the establishment is a member of the AFMR, which is a society of restaurants that hold each other to very high standards (one of them being that everything on the menu has to be homemade).
So if you're wandering through the streets in some city in France, don't quite know where to eat, and you see this golden plate with the blue-white-red capital R: absolutely get in there without hesitation and you're almost guaranteed to have a good time. It's never failed me! You can also look up their member restaurants on their website.

I spent my college years eating at a bouchon. except it wasn't called bouchon,then more like a troquet (a dive is the closest translation I can think of.)
It was run by an aging couple who took great care of their "kids". Papa went to "les Halles" twice a week and bought whatever was a great deal, it could be oysters, steak, crayfish, lamb chops flounder. . . it would be on our table the next day.
The menu was simple, it went like this: "if you're hungry enough you'll eat it, and NO there's is no choice" The price was right, about $3.50 for 3 courses plus a glass of vino. The atmosphere was amazing, the line wrapped around the block on WEs and I ate there some of the best food I ever had.
Thank you for showcasing Lyon. This is the city where my mom had her first teaching job but I was never able to go with her or alone. I love being able to see content of this city as there isn't much.
We spent 2 days in Lyon last month. That was a MISTAKE! We should have done 4 days. The bouchons are wonderful. Great video - it's like one of my friends from the neighborhood reviewing a restaurant.

I’m a larger un-hip fella. But I do follow simple dress rules. Button down shirts, long pants, and a scarf go a long way in Paris. I also do not speak French, but learning hello and goodbye in all establishments opens them up. I’ve traveled throughout the country, and have been treated kindly. They do like their conversations in more hushed levels.
I laughed at the taking the bacon out of the salad. Maybe they should take the tripe out of the andouilette ?
Warning : "graton" in Lyon is different from "gratons" in Dordogne. The latter is similar to rillettes (based on pork, duck or goose cured meat), but more greasy and can be insanely addictive.

Roar! Soft boiled is king. I was served a raw egg with salt and sesame oil over here in korea. You drink it in one shot and the sesame oil has it go down smooth. Might be near the bottom of the list. and what about cured yolk? Great episode as always.
Never had a cured yolk but I do love a raw egg on warm rice with sesame oil and soy sauce. Might be my #1

Tiny motorcycles - why? Gets them from place to place. That’s it, end of story. I never had a badly made bite of French food in France. Even the simplest of dishes tasted fantastic.

I actually think hard-boiled eggs get a bad rap simply because 90% of the world simply doesn't know how to make them and cook the ever loving bejeesus out of them, making them dry, crumbly and flavorless. Definitely try some properly cooked Tea eggs or soy sauced egg, they will change your mind about hard-boiled eggs.
Now I'm not saying they're best way to make eggs, but it isn't the worst way either though. But it really comes down to personal preference. Personally, I think poached eggs are a bit overrated and while I love them on certain dishes/foods, I hate they are on basically everything now. It's like if you want something to look fancy, just throw a poached egg on it and people will go crazy. i swear they so popular because it's so satisfying to pop them more than it coming down it enhancing the dish! LOL!
(I full admit there is something deeply satisfying and cathartic about busting up a poached egg and watching the yolk dribble down on to your food...)
Nice video. I visited Lyon in 2004 and felt the same affection and comfort with it that made it, in my mind, like the Chicago of France.
Too bad I can't eat the local food while there, as I am very allergic to alcohol. Too many times they tell me it has no alcohol, then I end up getting very sick. My wife will enjoy it. Meanwhile I will be going to boring McDonalds.

I moved to Lyon 24 years ago from the UK and have never regretted it for one moment. Next time you're there, try a bouchon called Notre Maison in the St Jean neighbourhood. It's amazing.
