Margate are amazing. They taste like sheepshead imo. Try to cook them whole. Get the skin crispy and add a sauce. Put it over some rice. All the fatty meat from the belly, collar and cheeks that get thrown out when filleting are the best parts. I always equate it to killing a chicken, taking the breasts and throwing away the wings and thighs. It doesn’t make sense how so many people think the fish is trash once the filets are off. You can scrape the rack for poke bowls, sushi rolls or fish cakes too.
Looks like some delicious tacos. There are always people who don’t want to eat what you say is good and most of the times they have not even tried it so we should go on eating what tastes good to us and let them to the same. Very nice margate chris biggest I've seen....went to ponce yesterday mullet everywhere got 2 big bull reds just before the 11 marker by the docks j small mangrove small black bass had a great day tacos looked great as well keep em coming
... I’ve seen several YTers say there garbage, don’t know why 🤷♂️🤷♂️. Only issue with them is the big pin bones, other than that it nice white flaky delicious meat 😁.

We call them lippy in trinidad this is one of the fish we catch while rock fishing great eating
