Mostly carbs? Seems very unhealthy… I recommend adding more fats and complete protein sources (you’re missing animal protein, so you’re short on some aminoacids our body does not produce). Overall, it’s a very unbalanced diet full of carbs. Healthy carbs, but still. Don’t be surprised if you have issues with hormones (they require fat to build), as well as diabetes (because of high carb situation). You’ll also look soft and “skinny fat”, die to lack of protein to maintain healthy muscle mass. Prepare to feel tired too, since you’re missing a whole bunch of stuff.
I would disagree with you here. I think you're taking a pretty severe view. She got a good amount of fats from the eggs, avocado, olive oil, ranch dressing and tofu. Also protein in the eggs, beans, tofu and peanut butter. In total, I estimated 35g of protein, which is too low. She should be getting around 60g of protein (depending on weight, activity and goals). Most vegetarian proteins are not complete on their own, but can be complete when eaten in combination (ie, rice and beans). Overall, I would say this day of eating is very healthy but likely too low in calorie especially since she worked out. It would be helpful to see the macro nutrients posted!
