Masmirus / Chilli paste with dried fish

Ingredients:
1 cup cooking oil
4 nos. onions (medium)
1 tbsp grated ginger
1 tbsp grated garlic
1/4 cup curry leaves (chopped)
3/4 cup coarsely ground dried tuna/flakes
1 cup dried chilli flakes
1 tbsp Light Soy sauce
1 tbsp oyster sauce
1 tbsp sugar
1 (1/2) tbsp lime juice
Salt to taste (1 tsp)
Directions:
Thinly slice the onions. Make sure it is evenly sliced as much as possible.
In a pot on low to medium heat, add oil and sliced onion.
Saute till onions are golden browned. Do stir frequently to evenly cook the onions. It takes around 10-15 mins.
Once onions are golden browned, add grated ginger, grated garlic and finely chopped curry leaves. Mix for 2-3 mins on low heat.
Add Coasely ground dried tuna/flakes. Mix 10-12 mins on low heat or until dried tuna and onions turn crispy. You can hear hollow sound once it is done. Or you can take a little piece out and once it is cooled down you can eat it and check if tuna pieces are crispy or not. To check if onions are crispy you can squeeze in between your fingers once it is cooled down.
Once onions and dried tuna pieces are crispy turn off the heat and add dried chilli flakes and mix it. Now add light soy sauce, oyster sauce, sugar, lime juice and salt to taste.
Turn on the heat and mix for 5-6 mins on low heat while stiring frequently to ensure all the flavours are evenly mixed.
Turn off the heat and let it cooled down. Once cooled, transfer it to an airtight container or glass jar.
Enjoy it with your meals. Goes well with almost all the savory dishes.
