Most likely because Sicilian is almost unintelligible to standard Italian. I learned Italian abroad, so I had to learn the standard dialect (Toscana), but It´s very hard for me to understand southern dialects of Campania, Calabria and Sicily.

My Nonna could feed 30 people without breaking a sweat. Played the numbers, cursed like a sailor, cooked like an angel. Her house was always full of friends and family. Someone delivered a package, she sat them down and fed them. This brings back a lot of fond memories.

It’s amazing how no matter what ethnicity all grandmas are similar. My grandma was Mexican but her kitchen was ran the same like nonnas. Reusing plastic containers for other ingredients and the way she cooked was similar. Love this segment!
My Nonna (also from Sicily) made chicken cutlets the exact same way!! Wow. I miss my Nonna and I feel like no matter how many times I make her chicken cutlets, they just don’t come out as good as she made them. It was the love and care she put into it that made them perfect and irreplaceable!
My grandma used to rap me on the top of the head with the dull side of a kitchen knife to drive me away from the stove when I was little. At the time I thought it was a bit strange but now I know she was protecting me from the natural tendency children to reach for the handles of hot skillets and boiling pans. She had a lot of kids and knew what trouble we could create for ourselves. I wish my dad had done the same- I burnt the crap out of my hand on his BBQ pit one sunday afternoon. Of course I learnt right away you don't touch. So maybe that was his tough love as well.

I know I'm way late on catching this but just tried cooking these chicken cutlets tonight with lemon sauce and it was exquisite. I'm not much for frying so I'm glad these were fried, and the breading was enough, not too thick as with many cutlets. The lemon sauce gave it additional pop and moistened up the cutlets perfectly. Thank you for sharing this.

A small spice bottle with a shaker top becomes a great home for needles and straight pins. The throwaway plastic food containers house leftover going to her kid's houses. Peanut butter jars hold nails and screws, etc. She and my dad raise their own fruits and veggies and their 20-gallon garbage can only fill up after A couple of weeks. She taught up waste was a sin.

Brine the chicken before you bread and cook them. -FP By Frank Pinello Serves 4 Prep time: 10 minutes Total time: 45 minutes (plus 1 hour brining) Ingredients 1 pound|450 grams boneless skinless chicken breasts, pounded thin 1 tablespoon plus 1 teaspoon kosher salt, plus more to taste ⅔ cup|160 ml olive oil, plus more for drizzling 3 tablespoons minced flat-leaf parsley 1 teaspoon dried oregano 3 garlic cloves, roughly chopped 2 lemons, juiced freshly ground black pepper, to taste 2 large eggs, beaten 6 tablespoons|35 grams grated parmesan cheese 1 cup|150 grams plain breadcrumbs 2 tablespoons all-purpose flour Directions 1. The family I used to nanny for (and am still very close to) was Italian (I am too, but they were off the boat) and Nonna made the best cutlets and they’d always ALWAYS be on the kitchen table. You eat them hot, you eat them cold, they were so good. I will definitely try the oven for mine next time and the lemon sauce. Sounds amazing.

you've never lived with a cooking mother if you don't understand how important shortcuts are in a household full of hungry growing boys.... she wasn't running a 5 star restaurant, she's running a household from generation to generation which is arguably just as difficult but requires different techniques..... mainly finding ways to save money, and finding shortcuts that still achieve relatively the same taste and results
If you watch his first video with her, you'll see her explain that in Sicilian tradition, they used breadcrumbs instead of cheese since the former was much cheaper than expensive parmigiano or pecorino. Many of my Sicilian friends remember the same thing topping their pastas. I think for her to graduate to using expensive hard cheeses (even more expensive in the States as they are imported) doesn't make sense.. Furthermore, who would waste beautiful parmigiano in a breadcrumb mixture?? It's like using Cheval Blanc to cook with...
Alex Schoonkind that doesn’t really mean anything. We get dried oregano from our home country and put it in those same shakers of diff seasonings that we have laying around. Look at the aunt Jemima bottle for example.

4. Dredge the chicken breasts in the egg mixture, then delicately coat them all over in the breadcrumb mixture. Pour the remaining ⅓ cup|80 ml olive oil in a 9-inch-by-13-inch baking sheet and add the chicken in an even layer. Drizzle more oil over the chicken and increase the oven to 400°F. Bake, flipping once, until the cutlets are golden and the chicken is cooked through, 25 to 30 minutes.
5. Dredge each cutlet in the lemon dressing and transfer to a platter. Serve with the remaining lemon dressing.

This video made me so happy! The family I used to nanny for (and am still very close to) was Italian (I am too, but they were off the boat) and Nonna made the best cutlets and they’d always ALWAYS be on the kitchen table. You eat them hot, you eat them cold, they were so good. I will definitely try the oven for mine next time and the lemon sauce. Sounds amazing.

you've never lived with a cooking mother if you don't understand how important shortcuts are in a household full of hungry growing boys.... she wasn't running a 5 star restaurant, she's running a household from generation to generation which is arguably just as difficult but requires different techniques..... mainly finding ways to save money, and finding shortcuts that still achieve relatively the same taste and results
If you watch his first video with her, you'll see her explain that in Sicilian tradition, they used breadcrumbs instead of cheese since the former was much cheaper than expensive parmigiano or pecorino. Many of my Sicilian friends remember the same thing topping their pastas. I think for her to graduate to using expensive hard cheeses (even more expensive in the States as they are imported) doesn't make sense..
Furthermore, who would waste beautiful parmigiano in a breadcrumb mixture?? It's like using Cheval Blanc to cook with...

Alex Schoonkind that doesn’t really mean anything. We get dried oregano from our home country and put it in those same shakers of diff seasonings that we have laying around. Look at the aunt Jemima bottle for example.
