They do headliners specific to Sunroof Models, 2/4 door, M3/nonM3, even E28 and E10! Combine the great prices for hte material with the instructions from this video and you can have your own headliner for relatively cheap!
Just keep in mind that for this to be a QUALITY build, you'll need to remove a lot of trim, including your rear windshield.

Really appreciate this video as I wanted to replace my e30 M tech headliner but couldn't/didn't want to remove front and rear windshield. So I spent 3 hours masking everything and spray dyed black. Turned out really nice and clean, you can't tell if it's dyed with naked eyes lol but I still wish I went with this route.

Mini binder clips are great for this. Get the big box and you have enough clips for the entire headliner

True you don’t really need that much pressure so binder clips will do too
