So I knew about the unused Professor Oak battle, but I never knew a glitch made it still function. That's super cool! Really wish they brought this back in Let's Go Eevee & Pikachu
To be clear, I activated it here using a Game Genie code because the glitch that makes it work with a functioning roster is way too complicated for me, haha. It is awesome that it's still in the game and possible to make work properly! I agree that it should've been brought back in Let's Go. Battling the Professor is just a really neat idea to bookend Pokémon stories and they do it so tragically little.
1:16 Relatable I like to think you were originally supposed to fight Prof Oak as a "champion" - that is, the final test before you become the champion without him actually holding the title - instead of (or after) Blue. The twist that your rival is the final opponent instead of Lance is great and definitely better, but could you imagine if it was actually the man who gave you your first Pokemon that you had to fight at the end of your journey?
I personally prefer Oak as a Dex Completion bonus, but that would've worked too. I think it would've cheapened Blue being the champion a bit too much, though.

Man I really wish FR/LG or Let's Go brought the Professor Oak battle back as a super boss
It would be awesome if they did, though I do appreciate LGPE using its unique timeline to allow you to fight Red as a superboss, at least.
