    Recipe for sweet challah in this link
    Leah Tiferet kitchens Challah
    For Rosh Hashanah
    Put in a mixing bowl in this order
    1+1/2 cups very cold water
    1 cup boiling water
    3/4 cup sugar (minus one teaspoon)
    2 tablespoons dry yeast
    3 tablespoons gluten
    1 tablespoons bread improver
    1 kilo white sifted flour
    1 tablespoon salt
    Mix on a low speed
    Add 1/3 cup oil gradually 🩷
    Mix for 10 minutes
    Oil the dough on all sides
    Cover with plastic wrap
    Cover with a towel
    Let rise for about 1 hours
    Punch down dough
    Let rise 20 minutes
    Divide dough with a dough cutter
    Shape round challahs
    Let rise for 15-20 minutes
    Brush with egg wash: 2 eggs 2 teaspoons sugar 2 tablespoons oil
    Add sesame/ poppy seeds
    Bake until challah have a beautiful golden colour not over done about 185 F if you use a thermometer/ bottom of the challah also is slightly golden
