Still ok, you can use tempered chocolate/compound chocolate, then it will set in room temperature. I use real chocolate without tempering in video, my chocolate can set abit after put at room temperature, also can set more in fridge
Best to weight the egg whites for precision ya?similar grade eggs also have different weight. Egg white will give more crisp flakiness and ensure no overbrowning especially on those dough with colors. Egg yolk will give crumble texture, more browning after baked

Yes, you can even cut them in shape n place on tray, I have chilled mine overnight before too, be sure to cover well with plastic wrap to prevent dry

要用couverture chocolate without tempering 也是可以,不过要在冰箱凝固了些较稳固
