Wagyu NY Strips! SNS Kettle!

- Failure? Almost! This was not my best cook, but we saved these Wagyu NY Strips from Hassle Cattle Company were outstanding. The Slow ’N Sear Kettle did its job!

• Got 2 nice 1 to 1 1/4” Wagyu NY Strips from Hassle Cattle Company!
• Seasoned with kosher salt only 12 hours in advance and dry brined them in the fridge.
• Set up the SNS Kettle with the Slow N’ Sear basket and cooked them directly over heat until finished.
• The entire process only took about 6 minutes to get to temperature for medium rare.
Summary: NY Strip are not my favorite, but these were outstanding. As you saw, my technique was not that best on this cook, but they turned out fine and were still in the medium rare window.

A tough cook happens to the best of us. What makes a great at home pit-master is not being consistently perfect but how you adjust when something goes wrong. Your steaks came out fantastic looking!

Cool video,,,thank you. But you are cooking Wagyu, not sure why you wouldn’t reverse sear.
Thanks! Reverse sear is my favorite way to cook a thick steak. For me, these were too thin and they only took about 5 1/2 minutes to finish the one and 6 minutes for the other one and it was a touch too done for us. I felt a reverse sear would have over cooked these? Appreciate the question as I am always learning what other people do! Cheers!
