To prepare these delicious potatoes with tomato sauce and eggs, start by making the tomato sauce. In a saucepan, heat a splash of extra virgin olive oil and lightly brown a clove of garlic, taking care not to burn it. Add the chopped onion and fry until transparent. Then, chop the tomatoes irregularly and add them to the saucepan. Cook over low heat for 35-40 minutes, stirring occasionally, until you get a smooth texture. To finish, pass the mixture through a food mill to achieve a finer and more homogeneous sauce.
While the sauce is cooking, wash, peel and cut the potatoes into thick sticks. Fry them in plenty of hot oil until they are golden and crispy. When they are almost ready, add chopped green pepper and sauté it with the potatoes to give it more flavor.
To complete the dish, fry the eggs in the same oil, adjusting the temperature depending on whether you prefer them with or without lace. Finally, serve the potatoes with the peppers, place the fried eggs on top and accompany with the homemade tomato sauce.

Hola Carlos. Mira, yo frío las patatas en una freidora. Pero la tengo solo para freír patatas. Y me salen buenísimas. Tengo otra freidora para el resto.
Usar la freidora de aire es una opción muy válida, que además te permite ahorrar tiempo 😄
