I have tried many different ways and this is the best hands down. Yes it takes some time but it's not a lot of actual work and after the first fry you can freeze them so just make a ton up front and you'll have fries for the next couple times.

it works, best ever crunchy home made fries!! from frozen you do quick fry for 4.5 mins no thawing it's perfection all over again! they said it in the recipe. ty for this great recipe!
Very nice techniques. A couple of tips and suggestions. 1) Just like in the restaurant frying oil can be recovered and re-used. Let the oil _cool completely_ then poor though a mesh strainer into a container like a Qt size Mason Jar. Store in the fridge. Some particles will get though the mesh and settle at the bottom. Just discard the bottom centimeter of oil (with the particles) the next time you use it. Top off the jar with fresh oil to maintain the amount required for your pan. 2) If you really want to filter the oil then use a coffee filter in the mesh strainer BUT this will require the oil to be HOT and you will NOT be able to use a glass jar. Instead put your filter and strainer over another TEMP SAFE pan or container and then scoop ladles of oil in to the coffee filter. This will take additional time as it will take some time for the oil to pass though the filter. I find this step unnecessary and just use the strainer alone as in #1. 3) After the first fry at the point where the video says "Cool 30 mins" is the time when one can freeze the fries for later use. Just place them a single layer on a piece of parchment or wax paper over a cookie sheet and place them in the freezer for about 20 mins. Then you can dump them in a zip-lock style bag and they will not stick together. Frozen fries can be stored for weeks but if they are as good as these they will not last that long.
Alternatively, mix 2 tbsp of cornflour with a little water. When the oil has cooled off a bit stir in the mixture. This picks up all the unwanted crispy leftovers and leaves you with nice clean oil.

I have discovered an air fryer can be substituted for the second fry as long as the first fry is in oil. Unfortunately this may not be cost effective for mass batches as air fryers consume electricity versus an already heated oil from the first fry. Thanks for sharing.
Tried it last night. 27 nov 2024. Came out really well... I used new potatoes and sunflower oil. I will try with old potatoes and post the results. Cutting the fries is tough hehe but homemade is so shape is not a problem... Maybe I will buy a fries cutter

How much salt and how much vinegar? Also, do we set the 10 minute timer (After) as soon as we pour in the cold water, salt and vinegar, OR do we wait for it to boil AND THEN set timer for 10 minutes??? And what oil did you use?
This is a good method, I can back this. But give yourself a lot of time in the kitchen because the outcome isn't worth your time unless you're just making fries for dinner. I'd rather just deep fry Mccains frozen French fries.
If you wanted to be efficient you could do a large batch and cut, boil and par fry and then freeze them in batches. Then it wouldn't be so hard just to take them out of the freezer and do that final fry for thin chips. You'd just want to be more careful in the final fry for accounting for moisture, foremost in preventing overflow of oil and secondly in that it saps temperature out of your oil.

I have made thin chips in this way and I think it is superior to what you can buy frozen at a shop.

I tried this and they came out AMAZING and ABSOLUTELY CRISPY. However, I used a lot more potatoes and cut them thicker, so I changed a few things that might be helpful for y’all… 1) After blanching in Vinegar/salt water, Put them IMMEDIATELY in ice cold water instead of laying out to cool. this will stop the cooking process within the potatoes, and I think they will over blanch if you just let them air dry 2) I did not follow the frying times at all. For the first fry, I fried them for about double or triple as long. This was because I had a lot more fries and thicker cuts. As the purpose of the first fry is to soften the potatoes and prep. them for the second fry, just go by feel. The second fry, I fried them until they looked golden brown, on the darker side. I hope y’all try this recipe out! I was worried they wouldn’t come out how the video portrayed it as at first, but they came out even better. The recipe was so good that I had to comment to show my appreciation. I added Himalayan pink salt, cajun seasoning, and Tajin to mine, and it was really good P.s: This was my first time cooking fries, so I took a lot longer than 1 hour. However, I think the outcome was totally worth it!
