- The apple cake is very easy to make with ingredients that are affordable and accessible. If you love apple desserts, this recipe is for you.
Recipe: Easy Apple Cake
Ingredients:
2 apples, Braeburn, 429g (15.1 oz)
2 large eggs
100g (½ cup) of granulated sugar
1 teaspoon of vanilla paste
A pinch or ¼ teaspoon of salt
1 teaspoon of baking powder
125g (1 cup) of all-purpose flour/plain flour
100g (3.2 oz) of melted unsalted butter
7g (½ tablespoon) of unsalted butter for greasing
Sour cream
Powdered sugar/icing sugar
Instructions:
1. Preheat the oven to 180 °C / 160 °C fan / 350F / Gas mark 4.
2. Peel the apples, core, and cut into 1 cm (0.4’’) thick pieces. Set aside.
3. To a large bowl, add the eggs, sugar, salt, vanilla paste, and whisk for 2 minutes. Add melted butter, flour, and whisk for about 1 minute until combined. Add baking powder, whisk for 2 minutes.
4. Add the apples to the batter and use a spatula to mix until the pieces are well coated.
5. Grease a cake tin with 7g (½ tbsp) of unsalted butter. Cake tin measurements: 20 x 7 cm (8 x 2 ½”).
6. Pour the mixture into the cake tin and spread it out evenly. Bake for 35 to 40 minutes. Allow to cool down for 5 to 10 minutes before serving.
7. Sprinkle powdered sugar on top and serve with sour cream. Enjoy!
Notes/Tips:
The apple cake can last in the fridge in an airtight container for up to 5 days.
The cake can be frozen for up to 3 months.
Natural yogurt can be used instead of sour cream.
Vanilla extract can be used instead of vanilla paste.
