- Ninja Foodi Layered Chicken Enchilada Casserole just might become your new favorite dish, it has all the qualities of traditional enchiladas but its so much better, it satisfies that Tex Mex urge and fills you up fast!!

3 chicken breast cut into bite size pieces
1 packet Taco seasoning. (I used old El Paso)
1 tbsp olive oil
2/3 cups water
6 fajita sized flour tortillas
4 oz red enchilada sauce. 1/2 the can
1/2 can Rotel (I used mild)
1/2 can corn (I used fire roasted)
1 1/2 cup cheese (I used Cheddar Jack) but use what ever kind you like
1 tbsp sour cream
1 tbsp jalapeño cream cheese (rom temperature)
1/2 avocado
1 sweet red baby bell pepper diced
1 sweet orange baby bell pepper diced
2 tbsp chopped cilantro
Pre heat Ninja Foodi using the sear/sauté button 5 minutes
When heated add olive oil
Add chicken
Cook until chicken starts to turn white
Add water
Add taco seasoning
Stir well
Add Pressure lid, set to seal and Pressure Cook for 5 min
While chicken is cooking, add cheese, corn, Rotel and red sauce( reserve 1/4 of sauce for top of last tortilla) to a bowl and mix well
When chicken is done do a quick release
Remove Pressure lid and punch the sear/sauté button
Simmer chicken mixture 8-10 minutes stirring frequently until liquid is almost all gone
Add chicken to bowl with the casserole mixture
Spray a 7 inch springform pan with Pam
Add 1 tortilla to pan
Add about a 1/2 cup of mixture to tortilla
Add another tortilla and gently punch down to even out mixture
Continue to layer until your out of mixture (do not go over the top of the pan)
Add the last tortilla
Add sauce and spread evenly over last tortilla
Add 1/2 cup cheese and spread evenly
Add trivet low side to pot
Place pan on trivet
Bake at 325 12-15 minutes check after 12 minutes
When done remove pan from inner pot and let cool 5 minutes
Remove springform and use spatula to move enchilada to plate
Mix sour cream and cream cheese and add to top of casserole
Add avocado, peppers and cilantro to top
I don't know how you find time to be Rick on Pawn Stars and have a cooking RUclips channel, but I am very glad you do! This is AMAZING! I actually made it with hamburger and wow, all of the flavors come together very nicely. Keep up the great work!

What size springform pan did you use? 7 or 8 inch

I was wondering if corn tortillas could be used instead. When it comes to enchiladas, I definitely prefer corn tortillas as they are more traditional for them.

I thought you had to use min 1 cup of liquid for pressure cooking
Apparently with a rack, you don't.
Depends..but he used BAKE setting with the rack
