Which will be better to use in a interview; rank(), dense_rank or row_number?
These are different approach to solve the problem, it's better to explain more than one solutionsl approach which shows your in-depth understanding towards the problem. Rank() function is used when we don't have any duplicate data and dense_rank() can be used even if you have dupes. Hope this clarifies

There is a demo project that i have covered starting from requirements till testing in ETL Testing playlist and Don't worry about domain. ETL testing or development is agnostic to any domain, it doesn't play much role with regards to testing and also there are various areas and components in any domain like BFSI or healthcare so knowledge of business is important to know but it's not really have much impact specially for testing

If you check the mapping sheet in the test case video, it's quite evident in the sheet which columns from source to next stages are mapped/linked . Not sure if i understand your question. Give more elaborative details if not.
