    Do you use your heating cabinet to heat your meat from refrigerator temp? If so how long did it take?

    What do you think of the Vevor Hot Box? They are cheaper, but maybe not as good as yoursz

    Is holding chicken in the proofer a problem? I’ve noticed the big name bbq restaurants don’t sell chicken. Explain the chicken hold if possible.

      I’ve noticed that too I don’t see them sell it all the time. I’ve used it for half chickens 🐓 and it works I keep it at 165 but with chicken I wouldn’t want to leave it that long in there but I’ve held it about 5 hours and it still in pretty good shape during those hours.

      10 briskets probably. Another time I think I had 4 briskets maybe 6 racks of ribs and a large pan of pork belly.
