Just to be clear, pumpkin spice is the seasoning used in the pie, but typically have no actual pumpkin. Also, canned pumpkin uses a different squash than what we associate with Halloween/carving pumpkins.
Pumpkin carving actually came from Irish tradition, we used to carve scary faces into turnips and leave them outside to vard off evil spirits, so when the Irish migrated to America they found pumpkins and they were easier to carve into and when the Americans seen that they went completely apeshit over all things pumpkin, here we don't go big into eating pumpkins but I have seen pumpkin bread, it's quite oldtimey and traditional I think 🤔 Americas seem to take everything too far though 😂
