I just learned with a hand mixer it makes a difference what hook goes in what slot. Otherwise it will spin the wrong way and the dough will climb up the hook. (Mine has an additional metal piece for identification purposes)

Great question, I used about 200 grams.. but not sure how much more it will take. You could start with 400 grams.. and if it is not working divide in half.. and do one half at a time. Just a thought. Let me know if you try more flour. Thanks for question.
I just did a 4+ lb (~1800g) batch of bread dough (the whole remainder of my bag) It powered through it. It's not as good as top of the line power tools for construction, but it gets the job done without any fuss.

I think the max used was medium speed. Took about 12 min total mixing. Never over heated. Was not a huge amount of dough. Best wishes
I checked.. was 18 min. 330 grams of flour.. so that is not very much.
